Sabudana Khichdi

Ingredients:
- 2 cups sabudana
- 1/2 cup roasted peanuts powder
- Salt to taste
- 1 tsp red chili powder
- 2 green chillies
- 2 tbsp ghee
- 2 tsp jeera
- 2 cubes small potatoes
- coriander leaves chopped for garnishing
- 4 drops of lemon juice
Method
- Wash and drain the sabudana or tapioca pearls. (Water should be just enough to wet the sabudana but not to soak them. Keep soaked for 4 hours or overnight.)
- To the sabudana, add half a cup of peanuts powder. Add red chilli powder and salt, and mix thoroughly.
- In a kadai, heat ghee, add jeera. Add green chillies once it starts sizzling.
- After frying the chillies, add the cubed potatoes and fry until golden.
- Next, add the sabudana mixture. Toss and cook for 10 minutes until the sabudana becomes golden brown.
- Sprinkle the lemon juice and garnish with coriander leaves.
- Serve with curd.
Cucumber Raita

Ingredients
- 1 cucumber
- 1 cup whisked curd
- ½ tsp red chili powder
- ½ tsp roasted cumin powder
- Salt to taste
- Some chopped coriander leaves for garnishing
Method
- Grate the cucumber and in a bowl add whisked curd as well.
- Now add the red chilli powder, salt and coriander leaves.
- Mix well and sprinkle the roasted cumin seeds as well.
- You can either serve it as a side dish or make a good enough amount as your dinner delicacy.
Oats Idli

Ingredients:
- 1 cup oats
- 1/2 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp chana dal
- 1/2 tsp urad dal
- 1/5 tsp turmeric powder
- 1 green chilli
- 1/2 cup chopped carrot
- 1/4 Cup chopped coriander leaves
- Salt as per taste
- 1 cup curd
- A pinch of fruit salt
Method:
- First, make the oats powder by dry roasting the oats in a pan until golden brown. Let it cool down and then grind.
- Next, take a non-stick pan and heat oil on a medium flame along with adding add mustard seeds. Let them crackle.
- Now add the two dals, turmeric powder and green chilli. Saute until light brown.
- Add the carrots and coriander leaves. Mix well and cook for a minute with some salt in it.
- Let the mixture cool down. Meanwhile, make the idli batter.
- For idli batter: In a large bowl fold in the oats powder that we made in the first step and mix in some salt.
- Add the curd and mix thoroughly with a pinch of fruit salt.
- Make a thick consistency and keep it aside with a cover.
- Now grease the idli moulds with ghee and pour in the batter.
- Put the mould in the steamer on a medium flame for 15 minutes.
- Serve with coconut chutney.
Tandoori Gobhi

Ingredients:
- 500 gms gobhi
- 4 cloves
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 stick cinnamon
- 1/2 tsp cardamom seeds
- 1/8 tsp nutmeg powder
- 1/2 tsp dry ginger powder
- 1/2 tsp methi seeds
- 1/2 tsp ajwain
- 1 tsp ginger and garlic paste each
- 2 tbsp dry roasted besan
- 1 tsp oil
- 1/2 tsp red chilli powder
- 1/2 tsp black pepper powder
- 1/2 cup curd
- 2 tbsp ground masala
- Salt to taste
Method:
- First prepare the masala by grinding together cinnamon, cardamom seeds, coriander powder, cloves, nutmeg powder, cumin seeds, dry ginger powder, methi seeds and ajwain.
- Now, take a large bowl and mix in ginger garlic paste, curd, oil, roasted besan, chilli powder, salt and black pepper powder. Whisk thoroughly.
- Add tandoori masala to the paste and mix well.
- Fold in the gobhi and coat it with the mixture.
- Marinate for 30 minutes.
- After marinating it, grill the gobhi for about 20-25 minutes at 220 degrees C.
- Serve with green chutney.
