Ingredients
- 250 grams of boneless chicken
- 1 cup of bread crumbs
- 2 tablespoons of all-purpose flour (maida)
- 1 egg white
- 1 teaspoon of garam masala
- 1 teaspoon of ginger garlic paste
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of black pepper powder
- 1/2 teaspoon of salt
- 3/4 teaspoon of paprika or red chilli powder
- Cooking oil (for deep frying)
Instructions
- Start by cutting the boneless chicken into 1-inch bite-sized pieces. Try to cut them in uniform size as this will help in frying all of them equally.
- Then, in a small bowl, add ginger garlic paste along with black pepper powder, red chilli powder, salt, garam masala, and onion powder. Mix these ingredients well.
- In a large bowl, mix seasoning and chicken. Rub the spices all over the chicken pieces.
- To start making the popcorn chicken, arrange a line of ingredients. For this, take maida in a bowl, then pour the egg white in another bowl, and bread crumbs to another one.
- Place them next to each other. Also, you can use buttermilk if you don’t want to use egg white.
- Now, pick up each piece of chicken and lightly coat it with flour. Then, dip it in the egg next, and lastly, roll and coat the chicken pieces with breadcrumbs.
- Place the coated pieces on a wide plate. And repeat this process for each piece of chicken. You can also coat the chicken pieces twice to add that extra crunch.
- Now, rest the coated chicken for at least 15 minutes. However, if you are using buttermilk, then it is better to rest them for at least an hour. This step is very important as in this time the coating of bread crumbs sticks well to the chicken pieces. So, don’t skip this step.
- Next, for frying the popcorn chicken, heat cooking oil in a kadhai on a medium flame.
- When you feel that the oil is hot enough, check the temperature by dropping a small piece of bread crumb in the kadhai.
- Gently slide the chicken pieces one after the other in the kadhai.
- You can also deep fry in batches but just make sure that you do not stir them for a minute after putting them, it can make the bread crumbs disperse in oil.
- Deep fry the chicken pieces on medium heat till it is cooked through and light brown on the outside. Make sure that each piece is fried evenly by stirring them for a minute.
- Now, take the popcorn chicken out from the kadhai with a slotted spoon and put them on a paper towel to drain excess oil.
- Serve your delicious popcorn chicken hot with Sriracha or Schezwan sauce.
