Soya kebab
Boil the soya chunks for 10-15 minutes and let them cool. In a large bowl, combine curd, mustard oil, garlic paste, ginger paste, Kashmiri chili paste, garam masala, coriander powder, chaat masala, salt, lemon juice, and cashew nut paste. Add the cooked soya chunks to the mixture and marinate for 1 hour. Grill the marinated chunks and serve hot.
Soya pulao
Soak the rice for 30 minutes. Wash and chop the vegetables. In a pressure cooker, heat two tablespoons of ghee, then add cumin seeds, sliced onions, tomatoes, and green chili. Sauté for a few minutes. Add coriander powder, cumin powder, and the remaining spices. Stir in the vegetables and soya chunks, followed by the rice. Add water, salt, and turmeric, then cook. Serve hot.
Soya keema
Soak the soya for 20-30 minutes and cook it for 10 minutes. Grind it into a coarse paste. In a pan, heat some ghee and add cumin seeds, onions, ginger-garlic paste, and tomatoes. Season with salt, turmeric, and coriander powder, then cover and cook the mixture for a few minutes. Once the masala is well-cooked, add the ground soya and cook for another 2-3 minutes. Garnish with coriander leaves. Serve with roti or use it to make a sandwich.

Spicy soya
Cook the soya chunks in water, then strain the water once done and allow the soya to cool completely. Dip the soya chunks in a maida batter and fry them. Set the fried soya chunks aside. In a kadhai, heat some refined oil and add cumin seeds. Once they splutter, add ginger-garlic paste and black pepper powder. Once cooked, stir in tomato sauce, chili sauce, soy sauce, and salt. Add cornflour slurry and cook well. Add the fried soya chunks and mix. Serve hot.
