Ingredients

  • Whole Milk 2 liter
  • 1-2 cup Heavy cream
  • Sugar 3/4th cup
  • 1 tsp Cardamom Powder
  • 4-5 tsp Corn Starch
  • 1 tbsp Rose Water  2/3 cup
  • chopped Pistachio/Pista
  • Saffron/Kesar: a pinch dissolved in 1 tbsp of milk

Step

  • Step 1 :

    Soak saffron in 1 tbsp of milk, keep them aside.

  • Step 2 :

    Now dissolve the corn starch with water and mix them well, and make sure there are no lumps.

  • Step 3 :

    Boil the milk. Keep the milk in freeze to thicken little bit.

  • Step 4 :

    In 35-40 mintues, add corn starch, saffron and sugar. Make sure you stir the corn starch mix before you add it to the milk otherwise it will stick to the bowl base. Mix all the ingredients well.

  • Step 5 :

    Now add the pistachios and again mix it well. The milk should be continue to simmer at low flame.

  • Step 6 :

    After 1.5 hours you noticed that the milk is thick. Its very important for the milk to get really thick. Next, it is time to add cardamom powder, rose water.

  • Step 7 :

    Let the whole mixture cool completely.

  • Step 8 :

    Pour the mixture into kulfi molds. And freeze it for 6-7 hours. De-mould and your kulfi is ready to serve!
