Ingredients

  • 8 bitter gourd or karela
  • 1/2 tsp asafoetida
  • 1/3 tsp fenugreek seeds
  • 1 cup sesame oil
  • 1/2 tbsp chilli powder
  • handful of curry leaves
  • 8 green chillies
  • 1/2 tbsp mustard seeds
  • salt as required

Step

  • Step 1 :

    Wash bitter gourd properly and then wipe using a cotton cloth.

  • Step 2 :

    Cut bitter gourd, length wise into halves and dig out the seeds.

  • Step 3 :

    Chop green chillies.

  • Step 4 :

    In a bowl, add bitter gourd, green chillies, salt and mix well.

  • Step 5 :

    Now take a pan and add 1 tsp oil.

  • Step 6 :

    Add curry leaves to the oil and take off flame.

  • Step 7 :

    In the same pan, add 2 tbsp oil and add mustard seeds.

  • Step 8 :

    Add bitter gourd to the pan and mix well.

  • Step 9 :

    Next add curry leaves, chilli powder, asafoetida powder and salt to the mix.

  • Step 10 :

    Store the pickle in air-tight containers. Add oil to the jars and keep them under sunlight for 2-3 days.
