The winter is here; and we are having cravings to major sugar cravings! We all know what that means. Yes, you guessed it right, we have a handpicked curation of cake recipes that you can DIY and try at home. What’s more, these are our recommendations sourced straight from self-taught baker and food blogger, Shivesh Bhatia.

Whole Wheat Carrot Cake:

Ingredients:

  • 1/2 cup milk
  • 1 teaspoon lemon juice
  • 1/2 cup caster sugar
  • 1/2 cup brown sugar
  • 1/2 cup oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest
  • 1 cup wholewheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 1/4 teaspoon ginger powder
  • 1 cup carrot, grated
  • 1/2 cup walnuts, chopped
  • Cream cheese frosting-
  • 1/2 cup cream cheese
  • 1/4 cup butter
  • 1/2 cup icing sugar

For the topping:

  • 1/4 cup cranberries, chopped
  • 1/4 cup walnuts, chopped

DIY Recipe:

  • Grease a 5 inch circle tin with oil and line it with parchment paper.
  • In a large bowl, whisk in milk and lemon juice together.
  • Now add in caster sugar, brown sugar, oil and vanilla extract and whisk till everything combines.
  • To this add the remaining dry ingredients- whole wheat flour, baking powder, baking soda, nutmeg powder, ginger powder and cinnamon powder.
  • Now fold in grated ⁠carrots and chopped walnuts. Mix everything together.
  • Transfer the batter in the prepared baking pan and bake at 180*C for 40-50 minutes or until a skewer inserted comes out clean.
  • Meanwhile make some cream cheese frosting by combining the cream cheese frosting ingredients using a hand blender.
  • Decorate your cake with the cream cheese frosting and chopped cranberries and walnuts.

Chocolate Strawberry Mousse Cake:

Ingredients:

  • 1 + 1/2 cup dark chocolate (260g)
  • 1/2 cup fresh cream
  • 2 cups whipped cream
  • 10-15 slices store bought chocolate cake
  • 1/4 cup espresso
  • 8-9 strawberries, halved
  • For the topping
  • 1/4 cup dark chocolate
  • 1/4 cup fresh cream

DIY Recipe:

  • Line a 7-inch springform pan with parchment and keep it aside.
  • Heat the fresh cream in a saucepan set over medium heat untill it just begins to simmer.
  • Pour the hot cream over the chopped dark chocolate and mix it together untill smooth and well combined. Let it cool completely.
  • In another bowl, add 1 cup of chilled whipping cream and whip it till stiff peaks.
  • Now fold in the ganache with the whipped cream and your chocolate mousse is ready.
  • Place cake pieces in the bottom of the lined pan and make sure it’s all packed nicely. Soak it with the espresso shot.
  • Arrange the strawberry halves all along the edges of the cake tin.
  • Transfer the chocolate mousse on the top of the cake and flatten it using an offset spatula. Make sure the strawberries don’t get disturbed.
  • ⁠Refrigerate it for 2-3 hours or until the cake sets completely.
  • For the glaze- pour hot cream over the dark chocolate and make it a liquid ganache.
  • Pour the ganache over the set mousse cake and enjoyy!!

Plum Cake:

Ingredients

For the soak:

  • 3/4 cup orange juice
  • 1 tablespoon lemon juice
  • 1 cup tutti frutti
  • 1/4 cup raisins
  • 1/4 dried apricots, chopped
  • 2 tablespoon dried cranberries
  • 2 tablespoon prunes, chopped

For the cake batter:

  • 3/4 cup brown sugar
  • 1/2 cup oil
  • 1 cup yogurt
  • 1 and a half cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cinnamon powder
  • 1/8 teaspoon ginger powder
  • 1/8 teaspoon clove powder
  • 1 teaspoon orange zest
  • 1/4 cup walnuts, chopped
  • 1/4 cup almonds, chopped
  • Icing sugar(for dusting)

DIY Recipe:

  • In a saucepan, add orange juice and lemon juice.
  • Now add tutti frutti, raisins, dried apricots, dried cranberries and prunes to the juice mix and cook till all the dry fruits soak up the juices. Set this aside.
  • Pre-heat the oven to 180 degree C and line an 8 inch round cake pan with parchment paper.
  • In a bowl whisk together brown sugar, oil and yogurt.
  • Now add in the dry ingredients- all purpose flour, baking powder, baking soda and all the spices- cinnamon powder, ginger powder, clove powder.
  • Add 1 teaspoon orange zest to dry ingredients.
  • Gently fold in the dry ingredients and mix until everything is well combined and no large flour pockets in the batter remain. Do not over mix at this stage.
  • Keep a small portion of the soaked dry fruits aside and fold in the rest along with the chopped walnuts and almonds in the batter and transfer the batter to the prepared cake pan.
  • Add the soaked dry fruits on the top of the cake as well.
  • Bake at 180C for 50-55 minutes or only until a skewer inserted in the center comes out clean.
