It's Strawberry Season! Baker Shivesh Bhatia's Handpicked Recipes Using The Winter Fruit

The winters are here and so is the season of our favourite seasonal fruit, strawberries! We bring you handpicked recipes from the self taught baker, food blogger and chef Shivesh Bhatia’s kitchen.

Desserts are always a good idea, we say that from experience! It is that time of the year again, when the chilly winter weather keeps our food cravings on peak. What’s more, dreaming about whipping up and gorging on our favourite seasonal strawberry recipes is all that we can think of. After all, we have got to make the most of the strawberry season and try our hands on a bunch of recipes.

We bring you three curated strawberry recipes from the self taught baker and culinary author, Shivesh Bhatia dessert treasure. These are sure to satisfy your sweet tooth and give a sugar high!

London’s Borough Market Style Strawberries And Chocolate:

Ingredients:

  • 8 to10 strawberries
  • 1/2 cup milk chocolate
  • 2 tablespoon oil

Method:

1. Chop the milk chocolate into fine chunks.

2. Set up a double boiler by placing a saucepan filled with some water over medium heat. Then put a glass bowl over the saucepan.

3. In the bowl, add in the chopped chocolate and oil. Let it melt completely together.

4. Now in a glass, add in the whole strawberries and pour the melted chocolate over it and enjoy!

Healthy Strawberry Milkshake Chia Pudding:

Ingredients:

  • 1 cup strawberries, halved
  • 1 banana
  • 2 tablespoon oats
  • 1 tablespoon honey
  • 1 and 1/4 cup milk
  • 3 tablespoon chia seeds

Method:

1. Add the strawberries, banana, oats, honey and milk in a blender. Blend until the mixture is smooth.

2. Transfer the berry smoothie to a bowl and add in the chia seeds. Mix well.

3. Allow the mixture to set in the fridge for 2-3 hours or overnight till the chia seeds swell up and become thick.

No Bake Strawberry Cheesecake:

Ingredients:

  • 20 to 25 digestive biscuits
  • 1/2 cup butter, melted
  • 1 and 1/2 cup cream cheese
  • 1/2 cup strawberry puree
  • 1 and 1/2 cup whipped cream, beat into stiff peaks

For the topping:

  • 5 to 6 strawberries, sliced
  • Strawberry jelly

Instructions:

1. Blend the biscuits into fine crumbs and mix it with melted butter until it resembles wet sand.

2. Press the biscuit mixture into the bottom of an 1500 ml oval dish. Place it in the refrigerator to set while you prepare the filling.

3. In a mixing bowl, whisk together softened cream cheese, strawberry puree and whipped cream until it’s smooth and creamy.

5. Pour the cheesecake filling over the set biscuit crust in the oval dish and spread out into an even layer.

6. ⁠Now put the strawberry slices evenly over the cheesecake layer.

7. ⁠Refrigerate the cheesecake for at least 4 hours, or until it’s firm.

7. Lastly make the strawberry jelly as per the instructions given behind the pack.

8. Pour over the strawberries with the help of the back of the spoon.

9. Refrigerate again till jelly sets completely and enjoy!
