Baker Shivesh Bhatia Serves Gooey Brownie Recipes For Holiday Season 2023

In time for the festive season, we bring you three handpicked brownie recipes from Delhi based self-taught baker and food blogger, and author of four cookbooks who has recently been featured in Forbes 30 Under 30, Asia list. You can try these recipes at home and enjoy them by the fireside with your friends and family.

Healthy Gluten Free Jowar Brownie Recipe:

Ingredients:

  • 1/2 cup butter
  • 1/2 cup dark chocolate
  • 6 tbsp jaggery powder
  • 3/4 cup milk
  • 1/2 cup jowar flour
  • 6 tbsp cocoa powder
  • 1/3 cup chocolate chunks
  • Chocolate chips, for topping

Method:

1. Take chocolate and butter in a bowl and melt it. Combine till it forms a homogeneous mixture.

2. Add jaggery powder and milk to the above mixture and whisk again.

3. Lastly, add the jowar flour and cocoa powder and fold till no lumps remain and a smooth batter is formed.

4. Add the chocolate chunks and fold again. You can use either milk chocolate or dark chocolate depending on your sweetness preference. Let the batter rest for 5-10 mins for it to thicken a little bit .

5. Meanwhile, preheat the oven at 180 degree Celsius.

6. Pour the rested batter in a greased and lined 5-inch square pan.

7. Top it with some more chocolate chips.

8. Bake at 180 degree Celsius for 30 mins. Let it come to room temperature before slicing.

9. You can even refrigerate the brownies for neater edges while slicing.

Winter Special Brownie Chikki Bites:

Ingredients:

  • 1 cup butter (226 grams)
  • 1 cup dark chocolate
  • 3/4 cup sugar
  • 1+1/2 cup milk, warm
  • 3/4 cup cocoa powder
  • 1 cup whole wheat flour
  • 1 cup peanut chikki
  • Chocolate ganache
  • 1/2 cup dark chocolate
  • 1/2 cup fresh cream, warm

Method

1. Preheat the oven to 180 degree celsius and line an 8X8 inch square pan with parchment paper leaving handles on both the sides

2. Start by preparing a double boiler with a saucepan filled with water up to an inch and put a heatproof bowl over it. Make sure the bottom of the bowl does not touch the water

3.Add in the butter and chocolate in the bowl. Cook it until they both melt completely and remove it after they are cooked from the double boiler

4. Once the mixture cools down add in the sugar and whisk it properly

5.Now add in the warm milk, whole wheat flour and cocoa powder. Give this a good mix to bring the brownie batter together

6. Roughly chop the peanut chikki and fold it in the prepared brownie batter carefully

7. Pour the brownie batter into the prepared square pan and bake it in the preheated oven for 30-35 minutes

8. Once baked, let it cool down completely before cutting it into equal squares.

9.Garnish these brownie squares with a dollop of chocolate ganache and crushed peanut chikki

Eggless No Oven Brownie At Home Recipe:

If you don’t have an oven at home and still want to whip up a brownie storm, then don’t worry we’ve got an eggless, no ‘maida’ recipe you can try at home.

Ingredients:

  • 1/2 cup melted butter
  • 3 tbsp sugar
  • 3/4 cup milk
  • 1/2 cup whole wheat flour
  • 6 tbsp cocoa powder
  • 1/4 cup milk chocolate chunks
  • 1/4 cup dark chocolate chunks

Method:

1. In a bowl, add melted butter, sugar and milk. Mix thoroughly.

2. Now add the dry ingredients- whole wheat flour and cocoa powder. Mix till everything is well combined.

3. Gently fold in milk chocolate chunks into the batter.

4. Pour the batter in a 6- inch square dish lined with parchment paper and top it up with the dark chocolate chunks.

5. Preheat the cooker by adding some salt on the bottom of the cooker along with a small stand and heating it on low-medium with the lid on for 5-7 mins.

6. Carefully place the brownie pan on the stand and cover it with the cooker lid. Cook on low-medium heat for 25-30 mins.
