While a multi-course meal (Wazwan), maybe a far-fetched idea, owing to long hours behind making it and the number of dishes that need to be cooked, why not try making some Rista hat home instead?

Wondering what Rista is? Think no more. Rista is a popular Kashmiri Cuisine that includes a softer variant of meatballs or kebabs. While kebabs can be made with minced mad, Rista requires the meat to be turned even finer. One requires a special wooden hammer and log to process the meat into mince.

Basically, Rista is meatballs in fiery red gravy and requires around 20 minutes to prepare and a further 20 to cook. It pairs amazingly well with aromatic rice.

Ingredients

  • Mutton: 1/2 kg
  • Ginger: 1/2 inch pieces
  • Green Chilli: 8-9
  • Coriander leaves: A bunch
  • Garlic: 7-8 cloves
  • Onion: 2
  • Cumin Seeds: 1 teaspoon
  • Cardamom brown: 1
  • Cardamom green: 4
  • Bay leaf: 2-3 no

  • Nutmeg: a small pinch
  • Red chilli powder: 1 teaspoon
  • Turmeric Powder: 1/4 teaspoon
  • Coriander powder: 1 teaspoon
  • Tomato: 2
  • Salt: as needed

Preparation

  • Take boneless mutton pieces and pound it on a smooth stone with a wooden mallet, adding meat fat while pounding till it gains a paste-like consistency. 
  • Grind ginger, garlic and green chilli (optional) without adding water. Take minced mutton in a bowl or plate, add grind chilli (optional), coriander leaves, salt and fried onion. Mix well and roll into balls.
  • Put the balls in a wok and cook on low flame for 10 minutes.
  • Add heat in the nonstick pan and deep fry the balls. Buy nonstick pan here at ₹ 657.00.
  • In a separate pan, heat oil. Add onion and cook on medium heat till onions are light golden brown.

  • Add the spices in fried onion. Add red chilli powder, turmeric powder, coriander powder, bay leaf, tomato and salt as per taste.
  • Cook till the natural oils of the spices come out.
  • Now add fried round balls in the gravy and 1 cup water. Cook covered on medium heat till 5 minutes. Serve with rice.
