Ingredients

  • 2 cup macaroni
  • 11/2 tbsp butter
  • 1 minced onion
  • 2 minced garlic cloves
  • 1 tbsp minced ginger
  • 1 diced tomato
  • 1/2 tsp ground cumin powder
  • 1/2 tsp turmeric
  • 1/8 tsp red chili powder
  • 1/2 tbsp garam masala
  • Pinch of cardamom
  • Salt as per taste
  • Pepper as per taste
  • 1/8 cup flour
  • 11/2 cup milk
  • 2 cup grated cheese
  • 1/8 cup breadcrumbs

Instructions

Step 1
Preheat the over and grease an oven-proof dish with some butter.
Step 2
Cook the macaroni in a pot of water with some salt in it. It should take a few minutes until it is al-dente and then drain.
Step 3
Take a skilet and melt the butter in it. Fold in the garlic, ginger and then lastly the onion. Cook for 5 minutes until it turns golden.
Step 4
Add tomatoes and all the spices, sauteing and cooking it for 5 minutes.
Step 5
Sprinkle the pepper, salt and flour, stirring it for 2 minutes.
Step 6
Slowly add the milk and stir as it thickens. Cook it for 10 minutes or until it becomes thick enough or as you like it.
Step 7
Add the cheese and stir continuously until it has melted.
Step 8
Now, spread the macaroni in the baking dish and pour over the cheese sauce. Stir it gently without breaking the macaroni as we need to coat it all with the sauce.
Step 9
Sprinkle the top with the breadcrumbs and bake for 30 minutes, until the top is golden.
Step 10
Serve with some khus khus and soda drink. In case it sounds a bit overwhelming, do give this tried and tested combination a try.
