Ingredients

  • For Dough
  • 2 cups of refined flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ cup milk
  • 1 tbsp curd
  • oil as required
  • ½ tsp salt
  • 1 tsp sugar
  • For Stuffing
  • 1 tsp coriander leaves
  • ¼ cup finely chopped capsicum
  • 1 tsp chopped green chillies
  • 1 tsp mustard seeds
  • 1 tbsp rice bran oil
  • ½ tsp powdered black pepper
  • 2 tbsp tomato ketchup
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • ½ tsp chaat masala powder
  • ¼ tbsp amchur powder
  • salt as required
  • 1 tsp green chutney
  • 200 g grated paneer
  • 1 tsp finely chopped ginger
  • ¼ cup finely chopped tomato
  • ½ cup finely chopped onion

Step

  • Step 1 :

    It is a super easy snack recipe that you can make in minutes. Sieve maida in a large bowl. Add baking powder, baking soda, sugar, milk, yogurt and mix well.

  • Step 2 :

    Add water as required and knead a smooth dough. Apply 1 tbsp oil on the dough and cover it with a damp cloth. Set it aside for an hour.

  • Step 3 :

    Meanwhile, heat rice bran oil in a pan and add mustard seeds and cumin seeds in it and wait until they crackle.

  • Step 4 :

    Next, add the onions, tomatoes, salt, ginger, green chilies, capsicum, black pepper powder and saute for a few minutes. Set the mixture aside.

  • Step 5 :

    Once your mixture cools down, add grated paneer, sprinkle some masala powder and amchur powder to it. Mix it well and then add tomato ketchup, chopped coriander, and salt in it.

  • Step 6 :

    Now apply some oil on your palms and take one dough ball and roll into small poori like a circle using a rolling pin. If required, dust some dry flour over it while rolling to avoid sticking. Take 1 tbsp of paneer mixture and put it in the center.

  • Step 7 :

    Enclose it with all sides of the dough circle and seal its top merging point. Apply a little oil on each ball and set them aside for 15 minutes.

  • Step 8 :

    Now, gently press it and flatten its surface from both sides. Roll it out using rolling pin like a parantha, without putting much pressure on it.

  • Step 9 :

    Heat tawa over medium flame. Place kulcha over it and cook on medium flame with a little bit of ghee, until golden brown on both sides and crisp.

  • Step 10 :

    Cut into squares and serve warm with ketchup or green chutney and chole.
