Ingredients

  • 400g mangoes
  • 4 tbsp honey (depending on mango sweetness)
  • ¼ cup cold water
  • ⅓ cup hot off-the-boil water
  • 2 tsp gelatin powder
  • Lemon juice as per taste
  • ⅓ cup whipping cream or coconut milk

Step

  • Step 1 :

    Take cold water and sprinkle the gelatin in it. Keep it aside for 10 minutes until it has dissolved.

  • Step 2 :

    Blend 300 gms of the mango and keep the rest aside for garnishing. In the mango puree, also add honey to make it smooth and then transfer into a pot.

  • Step 3 :

    In the same pot, add cream and cook on medium heat. Keep stirring until it starts steaming.

  • Step 4 :

    Once the steam comes up, switch off the flame.

  • Step 5 :

    Pour the hot off-the-boil water into the gelatin solution and stir well.

  • Step 6 :

    Now, fold it into the mango mixture and mix well.

  • Step 7 :

    Taste to check the sweetness level and add honey or lime as per need.

  • Step 8 :

    Your mixture is now ready so pour it into the molds.

  • Step 9 :

    Refrigerate for at least 3 hours until you are sure it is firm enough.

  • Step 10 :

    While serving, you can pour some cream over the pudding and also add some mango cubes using that 100 gms of mango we had set aside earlier.
