Kosha Mangsho Recipe
Ingredients
- 750 gm mutton
- 3 medium onion
- 4 green cardamom
- 1/2 inch cinnamon stick
- 1 1/2 teaspoon meat masala
- 3 bay leaf
- 5 clove
- 1 teaspoon sugar
- 3 medium halved potato
- 1 teaspoon garam masala powder
- 12 black pepper
- 3/4 cup mustard oil
For Marination
- 1 1/2 teaspoon coriander powder
- 4 tablespoon curd
- 1 1/2 inches ginger
- 8 cloves garlic
- 1 1/2 teaspoon powdered red peppers
- 1 1/2 teaspoon salt
- 2 teaspoon powdered turmeric

Method
- Grind garlic, ginger, and onions into a smooth paste.
- Wash and clean the mutton.
- Add the ingredients for the marinade -curd, turmeric powder, coriander powder, red pepper powder, some mustard oil, and half of the ginger, garlic, onion paste and let it rest for about 2 hours.
- Prick the mutton with a fork so that it absorbs all the flavours.
- Heat 2 tbsp mustard oil in a wok to fry the potatoes till they turn golden brown.
- Keep them aside.
- To cook the mutton, heat the remaining mustard oil in another wok and add some turmeric to it.
- Temper it with the black pepper, cloves, cinnamon stick, bay leaves, and cardamom.
- Add sugar to it as it gives a nice red colour to the gravy and also contributes to the subtle sweetness of the spicy gravy.
- Add the remaining onion paste along with meat masala and fry for about 5 minutes.
- Once the oil separates add the marinated mutton.
- Cook at a low flame for about half an hour.
- Add 2 cups water and cover.
- Let the mutton cook for an hour till it becomes soft and succulent but on low heat.
- Now, add the fried potatoes and garam masala, and give it a good stir.
- Let it cool for some time and then sprinkle freshly chopped coriander leaves.
