One of the many things Bihar is known for is its famous and delicious delicacy, litti chokha. Pure desi ghee dripping from soft crunchy littis and smoky smell coming out of amazing eggplant, potato chokha, there is no other Bihari dish as scrumptious as this one! Over the years the popularity of litti chokha has reached several corners of the country, with almost everyone trying this dish at food stalls and even at fine-dining restaurants. Ingredients

  • 3- 4 cups of whole wheat flour
  • 2 large tablespoons pure ghee
  • ¼ teaspoon of baking soda
  • 2 cups of gram flour (sattu)
  • 2 tablespoons of mustard oil
  • 1 inch grated ginger
  • 2-3 finely chopped green chillies
  • 3-4 finely chopped garlic
  • ½ cup of finely chopped coriander leaves
  • 1 tablespoon of pickle masala
  • 1-2 tablespoons of lemon juice
  • 1 tablespoon of red chilli powder
  • salt to taste
  • 1 large eggplant
  • 2 tomatoes
  • 1 finely chopped onion.

Step

  • Step 1 :

    Take a mixing bowl and add whole wheat flour, salt, ghee and cooking soda. Knead them all together in a soft dough.

  • Step 2 :

    Cover the dough with a cotton cloth and keep it aside for around 20-30 minutes.

  • Step 3 :

    Start working on your filling. In a bowl add gram flour (sattu), ½ tablespoon mustard oil, grated ginger, green chillies, coriander leaves, pickle masala, lemon juice, red chilli powder, and salt. Mix them all together.

  • Step 4 :

    Keep the mixture aside, and start working on your chokha. Pre roast eggplant, and tomatoes over direct flame until nicely charred.

  • Step 5 :

    Once done, keep them in cold water to peel of the skin easily.

  • Step 6 :

    Mash your veggies nicely in a bowl. Add green chilli, garlic, ginger, onion, salt and mustard oil. Mix everything nicely and keep aside.

  • Step 7 :

    Now start assembling litti. Take a lemon-sized dough and roll it to make a small puri.

  • Step 8 :

    Keep 1 ½ tablespoon of filling in the centre of the dough and bring the ends together and seal it well.

  • Step 9 :

    Prepare all the other littis in the same manner. Once done, keep them covered with a cloth.

  • Step 10 :

    Pre heat your grill or oven to 180 degrees C. Start baking your littis in the batch of 2-3 until browned from the top.

  • Step 11 :

    Keep flipping your littis upside down while cooking.

  • Step 12 :

    Once done, dip the littis in pure ghee. Serve with chokha, green chutney, onions and pickle.
