Kanji vada is a popular delicacy of Rajasthan and Gujrat. There is hardly any festival which is marked without this yummy recipe. It is a soothing dish, which is prepared using various elements. The flavours feel like a party in the mouth, whereas the texture of vada gives you utter satisfaction.
How To Make Kanji Vada?
- Begin by making your kanji. You will need a bowl.
- Add all the elements, such as mustard seeds, black salt, chilli powder, and salt.
- Add 5 cups of water and mix well.
- Refrigerate for 4-5 hours, after covering with a lid.
- To prepare the vadas, grind moong dal in a mixer grinder.
- Also, add ginger-green chilli paste, fennel seeds, asafoetida and salt. Give it all a good mix.
- Hot oil in a deep wok.
- Make small balls using the batter and drop in the hot oil.
- Deep-fry until it turns golden brown in colour.
- Soak the deep-fried vadas immediately in water for 30 minutes or so.
- Place the vadas in the kanji and refrigerate it too.
- Serve chilled after an hour.
