So today, we are here with the recipe of a traditional North Indian dessert - Aate Ka Halwa (Wheat Halwa).

This melt-in-your-mouth Indian dessert is super easy to make and can be made for festivals or special occasions. Don’t believe us?

You can make this delicious recipe by using just 3 main ingredients – whole wheat flour, sugar, and ghee. This wheat halwa is smooth, soft, and moist in texture. You can add dry fruits of your choice to add a bit of crunch. It only takes just about half an hour of time so you can cook this delish dish whenever you feel like having a traditional Indian dessert!

How To Make?

  • In a kadhai, add 3 cups of water and 1 cup of sugar
  • Heat them and let the sugar dissolve.
  • Boil the sugar solution in 2-3 minutes and make sure it doesn’t have any thread consistency.
  • Meanwhile, add ghee to another kadhai.
  • Then, add wheat flour and mix well.
  • Roast the wheat flour and stir continuously till it turns golden and aromatic.
  • Keep stirring the mixture for another few minutes to ensure even browning.
  • Next, pour the hot boiling sugar solution over the wheat mixture while stirring continuously.
  • Stir continuously till the wheat flour absorbs all the water and make sure any lumps are not formed.
  • After that, add cardamom powder, almonds, and raisins, and mix well.
  • Switch off the flame once the halwa’s consistency is semi-thick or thick.
  • Garnish with sliced pistachios and serve hot!

Ingredients

  • 1 cup of ghee (clarified butter)
  • 1 cup of wheat flour (atta)
  • 1 cup of sugar
  • 3 cups of water
  • 1/4th teaspoon of cardamom powder
  • 40 grams of raisins
  • 20 grams of sliced almonds
  • 5 grams of sliced pistachios (for garnishing)

Step

  • Step 1 :

    First, in a kadhai or saucepan, add 3 cups of water.

  • Step 2 :

    Then, add 1 cup of sugar. You can also use organic sugar or even jaggery powder, it all depends on your preference.

  • Step 3 :

    Heat the water and sugar. And stir well for dissolving the sugar.

  • Step 4 :

    Let the sugar solution come to a boil. It usually boils in around 2-3 minutes as we don’t need thread consistency in the sugar solution.

  • Step 5 :

    In the meantime, take a large kadhai with a heavy bottom, and add 1 cup of ghee (clarified butter). Keeping both the pans on two burners simultaneously can prove beneficial. As once the flour is roasted, the sugar solution will also be hot.

  • Step 6 :

    When the ghee becomes hot, add 1 cup of whole wheat flour and mix well.

  • Step 7 :

    Now, roast the wheat flour on low to medium flame.

  • Step 8 :

    Stir continuously till the flour starts to turn golden and aromatic. This process usually takes about 15 minutes.

  • Step 9 :

    Keep on stirring for another 5-6 minutes to ensure even browning. The mixture will turn dark golden brown and start releasing ghee indicating that it has cooked completely.

  • Step 10 :

    Next, pour the hot boiling sugar solution over the wheat mixture while stirring continuously. But be careful as the mixture has the tendency to splutter.

  • Step 11 :

    Keep stirring continuously till the wheat flour absorbs all the water. You cannot take a break at this step.

  • Step 12 :

    Then, continue to cook for another 4-5 minutes. Continue to stir and mix very well so that the lumps are not formed.

  • Step 13 :

    After that, add 1/4th teaspoon of cardamom powder, sliced almonds, and raisins, and mix well.

  • Step 14 :

    Once the Halwa’s consistency is semi-thick or thick and the ghee has also been released from the sides. Switch off the flame.

  • Step 15 :

    Garnish with sliced pistachios and serve your Atte ka Halwa immediately. It tastes best when warm!
