Soft paneer cubes are simmered into creamy and spicy spinach gravy in this easy recipe.
First, start by plucking only fresh and tender spinach leaves and cutting all its stems to avoid the bitter taste.
Then, take a vessel filled with water and rinse the spinach leaves at least 4-5 times. Completely drain the water and press the spinach to remove any excess moisture.
Now, heat 1/2 tablespoon of cooking oil in a pan.
Once the oil starts to heat, add green chillies and spinach leaves. Saute them for 4-5 minutes. Make sure that the raw smell of spinach has gone away.
Cool the mixture and then blend it with 3-4 cups of water and form a smooth and thick puree. Keep it aside.
Next, in a large kadhai, heat 1 tablespoon of oil and 1 tablespoon of butter and once they melt, roast the spices (cinnamon, cloves, cumin seeds, and cardamoms), till they turn aromatic.
Further, add 1 onion and saute till it turns golden brown.
Then, saute ginger garlic paste for 1-2 minutes.
After that, add 2 chopped tomatoes and saute till they turn soft and mushy.
Add 1/2 teaspoon of garam masala and salt as per your taste. Saute for about 2 minutes.
Now, add 1/2 cup of water and cook covered until onions are completely soft. Also, adjust consistency as required.
On low flame, add kasuri methi and pureed spinach that we prepared earlier. Mix them well and cook until the dish begins to bubble. This process usually takes 3-4 minutes so keep an eye on that.
Further, add paneer cubes and mix well. Simmer for 4-5 minutes or till the paneer absorbs the flavour.
Turn off the flame and garnish the Palak Paneer with cream.
Serve your delicious Palak Paneer hot with garlic naan, roti, or jeera rice.
