How To Make Korean Gamja Jorim

  • Start by washing the baby potatoes thoroughly to remove any dirt. If they are larger than bite-sized, consider cutting them in half.
  • Boil water in a pot, adding salt and vinegar to enhance flavour and help the potatoes maintain their shape during cooking. Once boiling, add the potatoes and cover with a lid. Cook for about 10 to 15 minutes until fork-tender but not mushy.
  • While the potatoes are boiling, prepare your braising sauce. Combine soy sauce, honey, minced garlic, gochugaru (if using), and water in a bowl. Stir well to mix all ingredients thoroughly.
  • After boiling, drain the potatoes and heat vegetable oil in a large skillet over medium heat. Add the drained potatoes and pan-fry for about 5 minutes until they turn golden brown on all sides.
  • Pour in your prepared sauce immediately after frying to prevent overcooking. Simmer the mixture for another 5 minutes until the sauce thickens and coats the potatoes beautifully.

Ingredients

  • 1 1/2 lb baby potatoes
  • 2 tbsp vegetable oil or any neutral oil
  • 1 tbsp toasted sesame seeds
  • green onions for garnish
  • For sauce - 1/4 cup soy sauce
  • 3 tbsp honey or your choice of sweetened syrup
  • 4 cloves garlic minced
  • 1 tsp Gochugaru (Korean chilli flakes) or red pepper flakes (optional)
  • 1/2 cup water

Step

  • Step 1 :

    Combine all sauce ingredients in a bowl.

  • Step 2 :

    Add salt and vinegar to a pot of boiling water. Add potatoes, cover, and cook until tender on medium-low heat, about 10-15 minutes. Drain and set aside.

  • Step 3 :

    Add oil and pan-fry your potatoes for about 5 minutes until golden brown in a large skillet over medium heat. Pour in the sauce and simmer until thickened, stirring frequently for an even coating.

  • Step 4 :

    Turn off the heat and mix in sesame seeds. Garnish with green onions and serve immediately. Enjoy!
