  • Rinse and pressure cook the arbi until soft but not mushy (about 2-3 whistles). Allow it to cool, then peel and mash the arbi in a bowl.
  • To the mashed arbi, add singhare ka atta or kuttu ka atta, chopped green chillies, sendha namak, black pepper powder, cumin powder, and chopped coriander leaves. Mix everything well until you get a smooth dough-like consistency.
  • Take a small portion of the mixture and shape it into round balls or small patties, depending on your preference.
  • Heat oil in a pan over medium heat. Fry the arbi koftas in batches until they turn golden brown and crispy. Make sure to turn them occasionally to cook evenly. Once done, remove the koftas and place them on a paper towel to drain excess oil.
  • Serve the crispy arbi koftas hot with vrat-friendly chutney or plain yoghurt. You can also serve them as a snack or with your main vrat meal.
