Arbi Ka Saag

1. Wash the colocasia root (arbi) thoroughly and peel off the skin. Cut the arbi into small cubes.

2. Heat the vegetable oil in a large pan or wok over medium heat. Add the mustard seeds and asafoetida. Let the mustard seeds splutter for a few seconds, then add the green chili, ginger, and garlic. Saute for a minute until fragrant.

3. Add the onion and cook until softened and translucent. Cook until it becomes mushy.

4. Add the turmeric powder, coriander powder, and red chili powder. Stir fry for a minute until the spices are fragrant.

Ingredients

  • 500 grams colocasia root (arbi)
  • 2 tablespoons oil
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon asafoetida
  • 1 finely chopped green chili
  • 1 finely chopped onion
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 1 tablespoon chopped coriander leaves

  • Step 1 :

    Wash and peel the colocasia root (arbi). Cut it into cubes or circles.

  • Step 2 :

    Heat oil in a pan or kadhai. Add mustard seeds and asafoetida. Let the mustard seeds splutter.

  • Step 3 :

    Add the green chili and onion. Saute until the onion is translucent.

  • Step 4 :

    Add the ginger-garlic paste and saute for another minute.

  • Step 5 :

    Add the turmeric powder, coriander powder, and red chili powder. Saute for 30 seconds.

  • Step 6 :

    Add the colocasia root cubes and salt. Stir to combine.

  • Step 7 :

    Add 1/2 cup of water. Cover the pan and cook for 10-15 minutes, or until the colocasia root is tender.
