The method of making stock and broth is almost the same. While stock is used to prepare sauces and soups, broth can be consumed as it is.
All you need to do is put in some vegetables like carrot, potato, bottle guard, tomatoes etc. along with their peels in a pot. Make sure you cut the peels finely. Now add water, salt, turmeric, ginger, garlic, and other condiments as per your taste. Now add water and boil it. Stir in between and let it cook for 15-20 minutes. You’ll be amazed by how good it tastes along with being healthy.
Another unique way of using vegetable peels is by using them to garnish your salads. All you need to do is finely chop your cucumber, carrot and apple peels and lightly mix them together. Now use this mix as a garnishing on top of your salad bowl. This will not only add more colour to your food but would also add to your nutrient consumption.

The main use of lemon peels is by turning them into zests. Lemon zest could be used as a seasoning and it gives a tangy taste. It could be added to curries, soups, broths, and salads. All you need to do is grate the lemon peel finely and add black pepper to it. Now spread them on a baking tray and microwave them for a few minutes. This process will remove their moisture completely. Now put it in a grinder and add salt to it. You can also add oregano or other herbs according to your choice.
A unique quality of potato which distinguishes it from every other vegetable is its versatility. Potato can be given any shape and size, cooked with any vegetable, can be baked, fried, boiled, and it will still taste delicious every time.
Potato peels can be turned into potato chips with a healthy twist. To start with, soak the peels in water for 15-20 minutes and pat dry them. After drying, you can add the seasoning of your choice such as salt, pepper, and oregano. Now instead of frying, bake these chips by laying them on a baking tray and putting inside an oven.
When it comes to chutneys, experimentation is the key to delicious discoveries. You can add peels of bottle guard, ridge guard, carrot, cucumber peels to your regular chutney mixture. This will give your chutney an additional taste and flavour. It could be eaten with curries, dosa, and idli.
