Ingredients

  • 1 cup leftover rice
  • 2 tablespoons cornflour
  • ¼ cup grated carrot
  • ¼ cup finely chopped onion
  • ¼ cup chopped capsicum
  • ¼ cup finely chopped spinach
  • 3-5 chopped green beans
  • 1 tablespoon finely chopped coriander
  • 1 chopped green chilli
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chilli powder
  • ½ teaspoon grated ginger
  • ½ teaspoon chaat masala powder
  • ½ teaspoon garam masala powder
  • 1 teaspoon lemon juice
  • salt to taste
  • oil to cook

Step

  • Step 1 :

    Begin by mashing your rice in a bowl.

  • Step 2 :

    Add all your healthy veggies in it. Mix well and then also add all your spices, along with salt.

  • Step 3 :

    Now add cornflour and bind the mixture together without adding water.

  • Step 4 :

    Grease your palm with a little bit of oil to make small patties. To make a patty take a small ball of mixture, flatten it between your palms.

  • Step 5 :

    Place a wok on the stove, add oil and allow it to become hot.

  • Step 6 :

    Once done, place 4-5 patties in hot oil and fry them on medium flame.

  • Step 7 :

    Remove your patties once it turns golden brown.

  • Step 8 :

    Cook all other pieces using the same procedure. Lastly, serve your vegetable rice cutlet with your favourite chutney.
