There is so much you can do with that rice, such as preparing this utterly delicious tea time snack – vegetable rice cutlet. Besides keeping you from wasting food, it will give you the nutrition of various veggies. It is ideal for both adults and kids if you are finding a way to make them eat wholesome vegetables.   • 1 cup leftover rice
  • 2 tablespoons cornflour
  • ¼ cup grated carrot
  • ¼ cup finely chopped onion
  • ¼ cup chopped capsicum
  • ¼ cup finely chopped spinach
  • 3-5 chopped green beans
  • 1 tablespoon finely chopped coriander
  • 1 chopped green chilli
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chilli powder
  • ½ teaspoon grated ginger
  • ½ teaspoon chaat masala powder
  • ½ teaspoon garam masala powder
  • 1 teaspoon lemon juice
  • salt to taste
  • oil to cook


Step 1
Begin by mashing your rice in a bowl.
Step 2
Add all your healthy veggies in it. Mix well and then also add all your spices, along with salt.
Step 3
Now add cornflour and bind the mixture together without adding water.

Grease your palm with a little bit of oil to make small patties. To make a patty take a small ball of mixture, flatten it between your palms.

Place a wok on the stove, add oil and allow it to become hot.
Step 6
Once done, place 4-5 patties in hot oil and fry them on medium flame.

Remove your patties once it turns golden brown.

Cook all other pieces using the same procedure. Lastly, serve your vegetable rice cutlet with your favourite chutney.
