How To Make Tomato Shorba
1. Start by heating oil in a pan. Once the oil is hot, add a bay leaf, cumin seeds, and cinnamon stick. Saute them for about a minute until they release a fragrant aroma.
2. Next, add ginger garlic paste to the pan. Saute it for about a minute until the raw smell disappears and the paste becomes slightly golden.
3. Now, add the pureed tomatoes to the pan. Let the mixture simmer on low heat for 4-5 minutes, allowing the tomatoes to cook and thicken a bit.
4. Add red chilli powder, coriander powder, and turmeric powder. Stir the mixture well and cook for another 1-2 minutes to allow the spices to blend and release their flavours.
5. Pour in some hot water and mix it well. Let it cook on a simmer until it reaches a boil.
6. Season with salt and black pepper powder as per your taste. Mix everything well, garnish with freshly chopped coriander leaves, and serve hot.
