Sabudana aloo paratha is a fasting special flatbread made using soaked sabudana, boiled potatoes, and vrat-approved spices. Unlike regular parathas made with wheat flour, this one doesn’t use any grain-based flour, making it ideal for Hindu fasting days. It’s usually cooked on a tawa using oil or ghee, which adds a good flavour to the dish. Step 1: First, rinse ½ cup sabudana under running water and soak it in 1¼ cup of water for 4 hours. Now, separately, grind 3 tbsp of dry sabudana into a fine powder and keep it aside.

Step 2: After soaking, drain any excess water. Check if the sabudana is soft by pressing it (it should mash easily). In a large plate, combine the soaked sabudana with boiled and grated potatoes, sabudana powder, crushed peanuts, chopped coriander, cumin, green chillies, and sendha namak.

Step 3: Then mix everything into a smooth dough. Grease your hands lightly with oil and divide the mixture into small equal balls.

Step 4: Place butter paper or a greased plastic sheet on your counter. Put one dough ball in the centre, oil your fingers, and gently flatten it into a round paratha (around 6 inches). If the edges crack, press and shape them back gently.

Step 5: Now grease the top with some oil. Flip the paratha along with the butter paper onto a hot tawa, then peel the paper off. Let it cook on medium flame, drizzle oil/ ghee, and carefully flip to cook both sides until golden brown.

Step 6: Repeat for all dough balls. Serve the Sabudana Aloo Paratha hot with curd.

Ingredients

  • 1 cup boiled and grated potatoes
  • 3-4 Sabudana
  • 2 teaspoon roasted cumin
  • 1 teaspoon Sendha namak (rock salt)
  • 2 butter paper/plastic sheet
  • 2-3 chopped green chillies
  • A handful chopped coriander leaves
  • 2 tablespoon roasted peanuts (finely crushed)
  • ghee as required
  • oil as required
  • water as required

Step

  • Step 1 :

    Now, knead into a smooth dough and divide into small balls.

    Grease a butter paper or plastic sheet, flatten each dough ball into a 6-inch circle using oiled fingers.

  • Step 5 :

    Now flip the paratha onto a hot tawa using the butter paper. Cook on both sides with a drizzle of oil or ghee.

  • Step 6 :

    Serve Sabudana Aloo Paratha hot with some curd or plain.
