Ingredients

  • 1 1/2 cup all purpose flour
  • 2 pieces ice cubes
  • 1/4 cup milk
  • 1/2 cup ghee
  • 2 1/2 cup water
  • 1/8 teaspoon edible food color
  • 1 cup sugar
  • 1/2 teaspoon powdered green cardamom
  • A few strands of saffron
  • 1/2 tablespoon chopped almonds or nuts

Step

  • Step 1 :

    To start preparing this yummy dessert, take a heavy-bottomed pan and prepare sugar syrup of 1 thread consistency.

  • Step 2 :

    Next, take a large bowl and add ghee in it. Take one ice cube at a time and rub the ghee vigorously. Take more ice cubes if required, till ghee becomes white in colour.

  • Step 3 :

    Add flour, milk and one cup water in the mixture and mix it well. But don’t add everything in one go.

  • Step 4 :

    Soak a few strands of saffron in warm water for 15 minutes and then add it in the mixture.

  • Step 5 :

    You may need to add more water to the batter to make it thin in texture. You may also add yellow food colour if desired.

  • Step 6 :

    Take an aluminium or steel container and fill it half with ghee and heat it. Once the ghee is hot enough, take a 50ml glass full of the batter and pour it in the centre of the melted ghee. Slowly, the ghee will form thread-like texture.

  • Step 7 :

    When foam settles down, loosen ghevar with a stick or spatula and take it out of the pan. Place it on the serving plate and drizzle evenly with warm sugar syrup. You can also dip the ghevar directly in the sugar syrup too.

  • Step 8 :

    Garnish ghevar with chopped nuts, rabdi and enjoy!
