Easy And Quick Recipe To Make Korean Sotteok Sotteok (Rice Cake And Sausage Skewers)
The popular Korean street snack Sotteok Sotteok derives its name from ‘so’ which is short for sausage and ‘tteok’ which is short for Korean rice cakes known as garae-tteok.
Soften the rice cakes by blanching them in boiling water for 1-2 minutes. Drain the water, rinse the rice cakes in cold water and set them aside. In another saucepan, combine raw or brown sugar, water, ketchup, soy sauce, and gochujang and keep stirring continuously for about five minutes until the sugar dissolves completely and the sauce thickens. Set the sauce aside. Then, thread the rice cakes and sausages onto the skewers in an alternating fashion for a more appealing appearance. You are advised to aim for three rice cakes and two sausages per skewer for a well-balanced size. Heat the oil in a separate shallow pan until it reaches boiling point. Then, gently transfer the skewers into the hot oil and fry them for about one minute on each side to ensure even cooking. Or, you can pan-grill the skewers using less oil if you do not wish to deep-fry them. Use tongs to remove the skewers from the oil pan and set them aside on a paper towel. Place the skewers into the sauce and dip them completely or use a brush to coat them with the sauce. You can use your preferred nuts or seeds and drizzle with the sauce for garnishing, as per your preference. Serve them immediately and enjoy!
