Gujiyas are sweet dumplings that are made of refined wheat flour aka ‘maida’ and are filled with a famous Indian indulgent reduced milk ingredient called ‘khoya’ and dry fruits. This sweet dish is a delicacy that is prevalent across the states of Uttar Pradesh, Madhya Pradesh and Rajasthan. These deep fried dumplings that are dipped in sugar syrup are a timeless and classic Indian dessert without which no festival is complete, more so Diwali.

How to make the dough:

  • Firstly, add a quarter cup of ghee into the flour and knead it into a dough with water.
  • Leave the dough to rest for half an hour.

  • Saute the ‘khoya’ over a medium flame and heat it till it turns golden brown.
  • Now, take the ‘khoya’ off the heat and add sugar, cardamom and almonds once it cools down.
  • Next, add shape to the filling and make it into ovals.

How to make the rolled out dough balls:

  • Make dough balls and roll them out.
  • Take a piece of rolled out dough and wet its edges with water.
  • Place a piece of filling over one half and fold the other half over it and press the edges to seal.
  • Now cut the edges off with a gujiya cutter that you source from the market or twist and pinch the gujiyas by hand to seal them.
  • Heat ghee in a ‘kadhai’ and deep fry the gujiyas until golden brown on all sides.
  • Next, make a sugar syrup by cooking water and sugar together till it attains a one-thread consistency.
  • Now dip the gujiyas in it and let them dry on a plate.
  • Serve the gujiyas hot or at room temperature and store in airtight containers to avoid them getting stale.
