Recipes For Monsoon 2025

Hot and Sour Soup

Spicy and steaming with wholesome veggies—this soup warms you up from the inside out.

Ingredients:

  • 1 Onion finely chopped
  • 1 tsp Garlic finely chopped
  • ½ Carrot grated
  • 1 tbsp Ginger grated
  • ½ cup Cabbage shredded
  • 1 tbsp Celery chopped finely
  • 1 spring onion cut finely
  • 5 mushrooms cut finely
  • ½ Capsicum cut finely
  • 5 French beans cut finely
  • 1 tbsp Bamboo shoot optional
  • 3 tbsp Cornflour
  • 3 tbsp Oil
  • Salt, pepper and sugar to taste
  • ¼ tsp Ajinomoto optional
  • 2 tbsp Soya sauce
  • 2 tbsp Green chilli sauce
  • 6 cups Clear veg stock
  • 2 tbsp Vinegar
  • Chilli oil 1 tbsp (Heat 3 tbsp of oil and add 8–10 dry chilli let it smoke, cool and drain)

Method:

  1. Heat oil in a pan. Add onions, garlic, ginger and stir fry.
  2. Add celery, carrot, cabbage, French beans, capsicum, mushroom. Cook for a minute.
  3. Add soya sauce, salt, pepper, sugar, green chilli sauce and mix well.
  4. Add the stock and bring to a boil. Mix cornflour with ½ cup water, making a smooth slurry.
  5. Stir till the soup thickens. Add vinegar.
  6. Drizzle chilli oil, garnish with spring onions and serve.

Warm Thai Noodle & Papaya Salad

A fresh twist on comfort—with crunchy papaya, silky noodles and a zesty, nutty kick served warm.

Ingredients:

  • 100 gm glass noodles
  • 2 cups raw papaya sliced into matchstick size
  • 3 tbsp oil
  • 1 tbsp minced garlic
  • 1 red bell pepper sliced
  • 1 stalk of celery chopped
  • 1 tbsp soya sauce
  • Salt and pepper to taste
  • ½ cup roasted peanut powder
  • 1 cup bean sprouts
  • 1 tbsp lemon juice

Method:

  1. Soak the noodles in hot water, drain and run under cold water. Add 1 tbsp of oil to coat the noodles.
  2. Heat the oil in a kadai and fry garlic till brown.
  3. Add papaya, celery, red bell pepper and stir fry.
  4. Add noodles and add soya sauce, salt, pepper. Remove from heat, add peanut, lemon juice, bean sprouts and garnish with coriander and serve warm.

Egg Pakora

What could be better than crispy pakodas amid rain?

Ingredients:

  • 4 Boiled egg whites
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red chilli powder
  • 1/2 tsp Garam masala
  • 1/2 tsp Kasuri methi
  • 1/2 tbsp Mustard oil
  • 2 tbsp Besan
  • 1 tbsp Cornflour
  • Oil for frying
  • Salt to taste
  • Water as required

Recipe:

  1. Take a bowl, cut pieces of boiled egg whites. Add all the ingredients, a little water and mix properly.
  2. Heat sufficient oil in kadhai. Fry the eggs in the oil until crispy.
  3. Drain excess oil and serve hot with sauce.
