Ingredients

  • 500 grams of bite-sized cut pieces of boneless and skinless chicken breast or thighs
  • 1/2 cup of plain yoghurt
  • 2 tablespoons of lemon juice
  • 2 tablespoons of ghee or vegetable oil
  • 2 teaspoons of garam masala powder
  • 1 teaspoon of cumin powder
  • 1/2 teaspoon of coriander powder
  • 1/2 teaspoon of cayenne pepper (optional)
  • salt (to taste)
  • 2-3 chopped green chillies
  • 2 minced garlic cloves
  • 1 chopped small onion
  • fresh cilantro for garnish

Step

  • Step 1 :

Marinate the Chicken: In a large bowl, whisk together the yoghurt, lemon juice, garam masala powder, cumin powder, coriander powder, cayenne pepper (if using), and salt. Add the chicken pieces and mix well to coat. Cover and refrigerate for at least 30 minutes or up to two hours.

  • Step 2 :

Heat Oil in a Pan: Heat one tablespoon of ghee or oil in a large pan over medium-high heat.

  • Step 3 :

Sear the Chicken: Remove the chicken from the marinade, allowing any excess to drip off. Add the chicken to the pan and sear until browned on all sides, about 5-7 minutes. Transfer the chicken to a plate and set aside.

  • Step 4 :

Soften the Onions: In the same pan, add the remaining one tablespoon of ghee or oil. Add the chopped onion and cook, stirring occasionally, until softened and lightly browned, about five minutes.

  • Step 5 :

Add the Spices and Chilies: Add the chopped green chilies, garlic, and cumin powder to the pan. Cook, stirring constantly, for 1 minute.

  • Step 6 :

Add the Chicken and Simmer: Add the seared chicken back to the pan and stir to coat with the spice mixture. Reduce the heat to medium-low and simmer, uncovered, until the chicken is cooked through and the sauce has thickened, about 10-15 minutes.

  • Step 7 :

Serve and Enjoy!: Garnish with fresh cilantro and serve hot with basmati rice, naan bread, or roti.
