  • 3 minced garlic cloves
  • Pinch salt & pepper
  • 2 tbsp butter
  • 1/4 cup maida
  • 450 gram mushrooms
  • 1 tbsp olive oil
  • 2 cups vegetable broth
  • 1/8 tsp dried thyme
  • 1/2 cup heavy cream
  • 2 cups water
  • 1 tsp soy sauce


Step 1
Wash the mushrooms and slice half of the mushrooms and chop the rest of it.
Step 2
Add the mushrooms, olive oil, garlic, and a pinch of salt and pepper to a sauce pan.
Step 3
Sauté the mushrooms over medium heat until the liquid has evaporated from the bottom of the pot, and the mushrooms have turned dark brown.
Step 4
Add butter and flour to the pan.
Step 5
Stir and cook for about two minutes more.
Step 6
Once the flour and butter form a thick paste, coat the mushrooms and the bottom of the pan, but don't let it burn.
Step 7
Now, add the broth, water, and dried thyme.

Keep stirring till the flour dissolves.

Simmer the liquid till the flour thickens the broth.

Stir the cream into the soup.

Next, add the soy sauce and taste the soup, and add an additional pinch of salt if needed and serve hot.
