  • Lamb shoulder - 500g - cut into bite-sized pieces
  • Freshly squeezed lemon juice - 1/2 cup
  • Olive oil - 1/4 cup
  • Garlic - 2 cloves - minced
  • Grated ginger - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cayenne pepper - 1/2 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh mint leaves - 1 cup
  • Fresh cilantro leaves - 1/2 cup
  • Green chilies - 1/2 cup
  • Small onion - 1
  • Garlic - 2 cloves
  • Grated ginger - 1/2 teaspoon
  • Lemon juice - to taste

  • Step 1 :

    To start, you'll need to prepare the marinade that will give your kebabs their signature flavour. In a blender, combine 1/2 cup of freshly squeezed lemon juice, 1/4 cup of olive oil, 2 cloves of minced garlic, 1 tablespoon of grated ginger, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1/2 teaspoon of cayenne pepper, salt, and pepper. Blend the mixture until it's smooth and well combined.

  • Step 2 :

    Once the marinade is ready, it's time to add the meat. For this recipe, we're using 500g of lamb shoulder, cut into bite-sized pieces. Place the lamb pieces in a large bowl and pour the marinade over them. Mix well to ensure the meat is coated evenly, then cover the bowl with cling film and refrigerate for at least 30 minutes.

  • Step 3 :

    While the meat is marinating, prepare the skewers. You'll need 10-12 bamboo skewers, soaked in water for at least 30 minutes to prevent them from burning during grilling. Thread 4-5 pieces of marinated lamb onto each skewer, leaving a small gap between each piece.

    Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 8-10 minutes per side, or until the meat is cooked through and slightly charred.

    While the kebabs are grilling, prepare a fresh mint chutney to serve alongside. In a blender, combine 1 cup of fresh mint leaves, 1/2 cup of fresh cilantro leaves, 1/2 cup of green chilies, 1 small onion, 2 cloves of garlic, 1/2 teaspoon of grated ginger, salt, and lemon juice. Blend until smooth.
