Badam Puri is an authentic and traditional sweet recipe from Karnataka. These crispy puris drenched in sugar syrup are beautifully textured, wonderfully flavored sweet delicacy that are perfect to satiate your eternal cravings for sweets or snacks. It is prepared by mixing badam (almond) paste with refined flour (maida). Using the same mixture, small puris are rolled and folded into a triangular shape. Deep frying these puris and then dipping them in sugar syrup will give you crispy, lip-smacking and healthy dessert! Here’s how you can prepare this sweet delicacy at home.

Ingredients

  • 1 cup Refined flour (maida)
  • 1/4 cup almond paste
  • 1/2 cup of rice flour
  • Milk as required
  • A few threads of Saffron (kesar)
  • 1/2 tsp Green cardamom powder
  • 1 1/2 cups sugar
  • 4 tbsp ghee

Step

  • Step 1 :

    Add flour, rice flour, salt, almond paste and ghee in a bowl. Mix it well.

  • Step 2 :

    Add little water and knead it into a soft dough.

  • Step 3 :

    Cover the dough with a damp muslin cloth and allow to rest for 10 minutes.

  • Step 4 :

    Heat water in a pan and add sugar, saffron and eliachi powder.

  • Step 5 :

    Stir the water till the sugar dissolves in a syrup and you get a one string consistency.

  • Step 6 :

    Divide the dough in small portions and roll them into balls.

  • Step 7 :

    Roll out each ball into a small round puri.

  • Step 8 :

    Apply a little ghee on each puri and give them a triangular shape and pin a clove to secure all the layers of the puri.

  • Step 9 :

    Heat up oil in a pan and deep fry puris on medium heat till the colour turns golden brown.

  • Step 10 :

    Dip the crispy puris in the sugary syrup and place them on a plate.

  • Step 11 :

    Garnish with grated coconut on top and you are good to go.
