Recipe of Authentic Italian Lasagna:

Step 1:

Heat olive oil over medium heat in a big skillet. Then toss in chopped vegetables including onion, carrot, and celery. Cook until tender then continue to saute for another minute after adding minced garlic. Now add ground beef and cook until browned and done. Add red wine and allow it to evaporate.

Mix the crushed tomatoes, seasonings and oil to create a rich tomato sauce. Give occasional stirring on reduced heat and let the sauce simmer.

Step 2:

Melt butter over medium heat in a saucepan then add some flour followed by whisking it continuously to avoid lumps. Cook for a few minutes then gradually add milk and continue to whisk. Cook the sauce on low heat until it thickens. Season with salt and a pinch of nutmeg, and set it aside.

Step 3:

Before you start assembling the sauces, preheat the oven to 200°C (390°F). Now, take a large baking dish and spread a thin layer of bechamel sauce followed by a layer of Bolognese sauce, and place a layer of lasagna sheets on top. Finish with a layer of bechamel sauce on top of the last sheet of pasta and sprinkle grated Parmigiano-Reggiano cheese. Now bake for around 30 minutes in the preheated oven until the top is golden and bubbly.

Let it rest at room temperature for a couple of minutes before serving.
