Fish Ambul Rhiyal (sour fish curry)
Seafood of course plays an important role here and this dish is one of the most loved fish curry variety. They mostly have tuna which is cut into pieces and then sauteed with a blend of spices including turmeric, black pepper, cinnamon, garlic, pandan leaves and curry leaves. What gives the fish a sour flavour is dried goraka, which is a small fruit. It is a dry curry dish, wherein all the ingredients are simmered with a small amount of water and cooked until the liquid reduces. It is best eaten with rice.
Kottu Roti
Kottu is Sri Lanka's hamburger, a favourite fast food which resembles fried rice, made with a roti known as godamba roti which is a flat and crispy bread. The chef fries and chops the roti with a selection of ingredients you choose. It is served with spicy curry sauce, which you can either use as a dip or pour over your entire plate. The way they make is what you need to watch. It is very fascinating!
Kukul Mas Curry (chicken curry)
This is a famous chicken curry which is prepared in different ways in different regions. It has spices like fennel seeds, cloves, cardamom and cinnamon sticks which are tempered in hot oil and then combined with chicken and spices like chilli powder, curry powder, lemongrass, turmeric, pandan leaves and curry leaves. The base of the gravy is that of coconut milk and puree of tomato. The chicken is stewed for an hour until the spices are completely infused. Have it with some hot rotis.
Parippu (dhal curry)
Among the most common curries made in households here, Parippu, or dhal curry is basically masoor dhal or split red lentils which are made using onions, tomatoes and fresh green chillies, and then mixed with tempered spices like cumin seeds, turmeric, fenugreek, mustard seeds and curry leaves. The difference here is that it has a splash of fresh coconut milk.
Lamprais
A combination of two Dutch words for 'lump' and 'rice', it is a combination of meat, rice and sambol chilli sauce, which is then wrapped into a banana leaf packet and steamed. The rice in this dish is cooked with meat stock which is a combination of different meats like beef, pork or lamb. It is then infused with cardamom, clove and cinnamon. Usually, this dish is placed in the centre of a banana leaf, along with the mixed meat curry, two frikkadels (Dutch-style beef balls), blachan (a shrimp paste) and a vegetable.
Hoppers (appam)
These are like pancakes wherein the batter is made from rice flour, coconut milk, sometimes coconut water and a hint of sugar. In Sri Lanka, these are served with an egg. The egg is cracked into the bowl-shaped pancake.

A very popular dish, Jackfruit is sliced into bite-sized chunks and boiled until soft. It is then cooked with onions, garlic, ginger and spices like mustard seeds, turmeric, chilli powder, roasted curry powder, pandan leaves and curry leaf sprigs. Then, in the end, comes in the coconut milk which is simmered to reduce most of the liquid.

Gotu Kola Sambol (pennywort salad)
A very easily available green vegetable dishes in Sri Lanka, it is shredded and combined with chillies, shallots, tomatoes, freshly grated coconut and seasoned with salt, pepper and lemon juice. This dish is mostly served with another curry and rice.
KiribathWith Lunu Miris
This dish is a special type of rice which is combined with thick coconut milk and often served during special or auspicious occasions.
