Rice is one of the easiest grains to cook. It goes with almost every kind of meal and can be served in a bowl for lunch or dinner. The internet is filled with ample recipes that you can cook at home. However, we have come up with three quick recipes that require only a large pot for cooking. No hassle and no mess!
Vegan Mix-veg One Pot Rice Recipe

Ingredients
- 3 Tablespoons of Oil
- 1 Medium Chopped Potato
- 3 Cloves of Garlic (Chopped)
- 1 Medium Chopped Onion
- 1 inch Ginger
- 150 gm Green Beans (Large Cuts)
- 1 Cup Tomato Puree
- 1 Medium Chopped Carrot
- 1 Cup of Basmati Rice
- 1/2 Cup of Corn Kernels (Optional)
- 2 Tablespoons of Lime Juice
- 1 Cup Chopped Capsicum (Yellow, Green, Red)
- 1/2 Teaspoon Red Chilli Powder
- 1/2 Teaspoon Turmeric Powder
- 1/2 Cup Chopped Coriander Leaves
- 1 Teaspoon Cumin Powder
- Salt to Taste
- 1.5 Cups of Water or Vegetable Stock
Method Of Preparation
- Wash the rice and keep them soaked in water. Keep the bowl aside.
- To a hot pan, add oil.
- Add chopped onions and wait for them to caramelise. Keep the pan on high heat throughout.
- Add garlic, ginger, potatoes and salt to taste. Cook until the potatoes are soft.
- Add green beans, carrot and capsicum.
- Once the vegetables have softened and have turned into a slight brown colour.
- Add fresh tomato puree, turmeric powder, red chilli powder, cumin powder.
- Mix everything and cook until the raw flavour of tomato puree is gone.
- You can turn down the heat if the vegetables start to burn.
- Add rice, corn kernels, salt to taste and water or vegetable stock.
- Give everything a stir and let the rice cook at low heat.
- Allow the rice to cook and add chopped coriander leaves and lemon juice.
- Turn down the heat and mix everything gently.
- Serve hot.
Mediterranean Rice One Pot Recipe With Lentils

Ingredients
- 1 Cup Basmati Rice (Washed and Soaked For Half Hour)
- 2 Tablespoon Olive Oil
- 1 Teaspoon Cumin Powder
- 1 Cup Overnight Soaked Brown Lentils
- 1 Tablespoon Chopped Garlic
- 1 Tablespoon Coriander Powder
- 1 Tablespoon Chopped Ginger
- 2 Medium Chopped Onions
- 2 Medium Finely Chopped Tomatoes/ 1 Cup Puree
- Salt to Taste
- 2 Cups of Water
- 1 Tablespoon Lemon Juice
- 1/2 Teaspoon Black Pepper
- 1.2 Cup Chopped Coriander Leaves
- 1/2 Teaspoon Red Chilli Powder
- 2 Chopped Green Chillies (Optional)
Method Of Preparation
- To a pan on high heat, add oil.
- Once the oil is hot, add chopped onions and salt to taste.
- Once the onions have caramelised, bring down the heat to medium.
- Add chopped garlic and ginger. Mix everything well.
- Add finely chopped tomatoes or puree.
- Add coriander powder, cumin powder and red chilli powder.
- Mix everything and cook until the oil separates. Add a dash of water to prevent the spices from burning.
- Add lentils, rice, water and to the pot.
- Add salt to taste.
- Let everything cook on low heat for about 20 minutes or half an hour.
- Occasionally stir in the middle.
- Once everything is ready, turn down the heat.
- Add chopped coriander leaves, black pepper and lemon juice.
- Gentle stir everything and serve the dish hot after 5 minutes.

Turmeric Garlic Rice One Pot Recipe

Ingredients
- 1 Medium Chopped Onion
- 5 Cloves of Garlic (Chopped)
- 1 inch Chopped Ginger
- 1 Tablespoon Turmeric Powder
- 1.5 Cups of Washed and Soaked Basmati Rice
- 1 Cup Capsicum (Red, Yellow and Green)
- 3 Tablespoon Olive or Avocado Oil
- 1/2 Teaspoon Red Chilli Powder
- 1/2 Cup of Finely Chopped Broccoli
- 1/2 Cup Chopped Green Beans
- Salt to Taste
- 1/2 Cup Corn Kernels (Optional)
- 1/2 Cup Chopped Coriander Leaves

Method Of Preparation
- To a pan on high heat, add oil.
- Add onion, garlic and ginger.
- Cook until the onions caramelise and garlic turns brown.
- Add red chilli powder or chilli or chilli flakes.
- Add broccoli, capsicum and green beans. Turn down the heat to a medium flame.
- Add salt to taste and turmeric powder. Let everything cook.
- Once the vegetables are done, add water, corn kernels and rice.
- Let everything cook on low heat.
- Once the rice and vegetables are cooked. Turn down the heat.
- Add chopped coriander leaves and finely chopped ginger for garnishing.
- Serve everything hot.
