Undoubtedly, Pav Bhaji is one of the most loved Indian street foods. There is nothing like enjoying the hearty veggie curry with a fresh, crispy bread bun on a chilly day. No? The curry is loaded with vegetables like potatoes, onions, carrots, chillies, peas, bell peppers, beans, and tomatoes among others. It is traditionally served with pav or bread bun.
Ingredients
- Oil – 1 tbsp
- Pathar Phool (lichen) – 1
- Garlic chopped – 1/2 tbsp
- Green chilli – 1
- Carrots chopped – 1/4 cup
- Coriander powder – 1 tbsp
- Potato mashed – 1 cup
- Salt to taste
- Water – 2 1/2 cups
- Methi Leaves (Fenugreek) – a pinch
- Butter – 2 tbsp
- Onion chopped – 1/4 cup
- Ginger chopped – 1/2 tbsp
- Beans chopped – 1/4 cup
- Cauliflower grated – 1/4 cup
- Chilli powder – 1/2 tsp
- Cumin powder – 1 tsp
- Tomato puree – 3/4 cup
- Pepper powder – a pinch
- Green peas – 1/2 cup
- Pav (soft buns) – 6
It usually takes 15-30 minutes to prepare this recipe. This recipe can easily serve 6 portions.
How To Make Pav Bhaji?
To Make Bhaji:
- Heat a pan and add 1 tbsp of oil to it. Add 2 tbsp butter.
- After the butter has melted, add Pathar Phool (Lichen).
- Add ¼ cup of chopped onion, ½ tbsp of chopped garlic, ½ tbsp of chopped ginger and 1 chopped green chilli. Give it a nice stir.
- Saute the onions until they turn light brown and then add the vegetables into the mix.
- Add ¼ cup of chopped beans, ¼ cup of chopped carrots, and ¼ cup of finely grated cauliflower. Stir. (The choice of vegetables can vary according to your preference)
- Do not overcook the vegetables. Give it a quick stir fry and then add the spices.
- Add ½ tsp of turmeric, ½ tsp of red chilli powder, 1 tbsp of coriander powder, and 1 tsp of cumin powder. Make sure you don’t burn the spices.
- Add one cup of boiled and mashed potatoes. Take a spatula and mix the potato with the spices.
- You can use a potato masher to further mash and mix the vegetables and the spices together.
- Add ¾ cup of tomato puree to the mix. Cook it for 5 minutes. Add some salt and pepper to taste.
- Add 2 ½ cups of water to the mixture and let it cook for 10-12 minutes.
- Add a pinch of Kasuri Methi once the bhaji is fully cooked.
To Make Pav:

- Put a flat pan on heat.
- Take 6 pavs and split them from the centre.
- Spread some butter as per your preference on both sides of the pav.
- Toast the pavs on the pan with the butter side down until they turn crispy.
Plate your pav bhaji and garnish with some fresh coriander leaves. The buttery pav bhaji is ready to be served.
