1. The Date and Fig Kaju Katli

Ingredients:

  • One cup of cashews
  • Half a cup of soft dates
  • One fourth cup dried figs
  • Half a teaspoon of cardamom powder
  • A few strands of saffron

Instructions:

  • Soak dates and figs in warm water for 15-20 minutes until soft.
  • Toast the cashews lightly in a pan until fragrant, then let them cool.
  • Blend the cashews into a fine powder.
  • Drain the soaked dates and figs and blend them into a smooth paste.
  • Mix the cashew powder, date-fig paste, and cardamom powder in a bowl.
  • Press the mixture onto a flat surface, roll it out evenly, and cut into diamond shapes. You can add a silver leaf for a traditional finish.
