Rich in fiber and low in carbohydrates, corn is one of the healthiest things you can have. It is especially considered great for consumption during these hot summers as it is also a good source of vitamin C, E, and antioxidants which are not just great for your health but skin too. Well, if you are already craving for some delicious corn snacks then here are healthy and easy to make corn snack recipes you can try.

Corn And Potato Soup

If you are trying to shed those extra kilos then you should add healthy soups like this one to your diet.

Ingredients Required For Potato And Corn Soup:

  • 1 cup corns
  • 2 onions
  • 2 potatoes
  • 1/2 tsp chopped garlic
  • 2 bay leaves
  • A handful of basil leaves
  • Salt to taste
  • Oregano to taste
  • 1/2 cup yellow bell pepper
  • 1/2 cup white wine
  • 1 tsp parsley
  • Butter for cooking

Directions To Make:

  1. In a pot, add butter, bay leaves, and chopped onions. Saute and cook on low flame.
  2. Add garlic, oregano, basil leaves, yellow bell pepper, chopped potatoes, water, and white wine. Mix well.
  3. Let the soup boil for 10 minutes.
  4. Transfer the mix to the blender and blend well.
  5. In the same pan, transfer it again and boil.
  6. Add salt and pepper according to taste. Top with parsley and serve. If you don't have parsley, use coriander leaves.

Corn And Pomegranate Chaat

Ingredients Required For Corn And Pomegranate Chat:

  • 1/2 cup boiled corn
  • 1/2 cup pomegranate
  • Orange cubes
  • Apple cubes
  • Chopped capsicum
  • 1/2 tsp lime juice
  • 1/2 tsp cumin or jeera powder
  • 3 tbsp tamarind water
  • 1 tsp chaat masala
  • Salt as per taste
  • Chopped coriander leaves
  • Chopped mint leaves
  • 1/2 tsp chilli powder

Directions:

In a bowl, add corn, pomegranate, orange, apple, and capsicum. Mix well.

Ingredients Required To Make Corn Waffles:

  • 2 cup maida or all-purpose flour
  • 1/2 tsp salt
  • 3 tsp baking powder
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 cup corn
  • 1/2 cup milk
  • 1/2 cup melted butter

Directions:

  1. In a bowl, add maida, baking powder, salt, and sugar. Mix well.
  2. In another bowl, add milk and egg and whisk well.
  3. Next, add melted butter to the egg mixture and blend well. Mix in the corn kernels and keep blending.
  4. Add this mix to the flour whisk till you get a thin, flowy batter.
  5. Fill the batter in a waffle maker and let it cook.
  6. Take out and transfer to a plate. Top with some butter, caramel, or blueberry sauce. Enjoy!
