Cucumber Raita
Ingredients
- 1 Cup Grated Cucumber
- 1 Cup Curd
- ½ Tsp Kashmiri Red Chilli Powder
- 1 Tsp Roasted Cumin Powder
- ½ Tsp Chaat Masala Powder
- Salt As Required
- 1 Tbsp Chopped Coriander Leaves
Instructions
- In a large bowl, add curd and whisk it until smooth.
- Add grated cucumber to the curd.
- Add all the spices, coriander leaves and salt. Mix well.
- The cucumber raita is now ready to be served.
Pineapple Raita
Ingredients
- 2 Cups Chopped Pineapple
- 2 Tsp Salt
- 2 Tsp Cumin Seeds Powder
- 2 Cups Curd
- ¼ Tsp Black Pepper
- 1 Handful Chopped Coriander Leaves
- 2 Tbsp Pomegranate
- A Few Mint leaves
Instructions
- In a large bowl, add curd and whisk it until smooth.
- Add salt, cumin seeds powder, black pepper and coriander leaves. Mix well.
- Add chopped pineapple to the curd. Mix well.
- Garnish with pomegranate seeds, coriander leaves and mint leaves.
- Your pineapple raita is ready to be served.
Beetroot Raita
Ingredients
- 2 Cups Curd
- 1 Beetroot (Grated)
- 1 Carrot (Grated)
- 1 Onion (Chopped)
- 1 Capsicum (Finely Chopped)
- 1 Tsp Roasted Cumin Powder
- Coriander Leaves (Chopped)
- Salt
Instructions
- In a large bowl, add curd and whisk it until smooth.
- Add the chopped veggies along with salt and roasted cumin powder.
- Mix everything well so that it combines.
- Garnish it with coriander leaves.
- Your beetroot raita is now ready to be served. Serve it chilled.

Vegetable Raita
Ingredients
- 1 ½ Cups Curd
- ¼ Tsp Roasted Cumin Powder
- ⅛ Tsp Pepper Powder
- 2 Tbsp Carrot (Finely Chopped)
- 1 ½ Tbsp Capsicum (Finely Chopped)
- 2 Tbsp Cucumber (Finely Chopped)
- 1 Tbsp Tomato (Finely Chopped)
- ½ Tbsp Coriander Leaves
- Salt To Taste

- Peel and chop all the veggies.
- In a large bowl, add curd and whisk it until smooth.
- Add salt and roasted jeera powder to the curd. Mix well.
- Add all the chopped veggies and coriander leaves to the curd. Mix well.

Bottle Gourd Raita/Lauki Ka Raita
Ingredients
- 1 Cup Grated Bottle Gourd
- ⅛ Tsp Salt
- 1 Cup Curd
- 1 Cup Water
- 1 Tsp Green Chillies (Finely Chopped)
- ½ Tsp Roasted Cumin Powder
- 1 Pinch Garam Masala Powder
- Black Salt
Instructions
- Rinse and peel the bottle gourd.
- Shred or grate the bottle gourd and keep it aside.
- Take the grated bottle gourd and add it to a pan. Add water to the pan.
- Stir it well. Simmer and cook till the bottle gourd softens.
- Strain the cooked bottle gourd until all the water is strained. Use your hands to strain the remaining water.
- In a large bowl, add curd and whisk it until smooth.
- Add the cook bottle gourd and green chillies to the curd.
- Add roasted cumin powder, garam masala powder and salt. Mix well.
- Your bottle gourd raita is now ready to be served. Serve it chilled.
