Poha is easy to digest and helps your body control levels of sugar in the blood. It is a rich source of iron and contains a low number of calories. It is a good choice of probiotic and comes loaded with carbohydrates.

Quick Poha Uttapam

Ingredients

  • 1 Cup Poha (Flat Rice)
  • 1 Chopped Medium Onion
  • 1/2 Teaspoon Chopped Ginger
  • 2 Tablespoon Besan (Gram Flour)
  • 1 Chopped Tomato
  • 2 Tablespoon Water
  • 1/4 Teaspoon Turmeric Powder
  • 1 Teaspoon Curry Leaves
  • 1 Teaspoon Garam Masala
  • 2 Tablespoon Rice Flour
  • 1 Tablespoon Chopped Coriander Leaves
  • 1 Tablespoon Greens of Spring Onions
  • 1 Teaspoon Chopped Green Chillies
  • Salt To Taste
  • 1/2 Teaspoon Black Pepper Powder
  • 1/2 Teaspoon Cumin Powder
  • 1/2 Teaspoon Red Chilli Powder
  • 2 Cups of Water

Method Of Preparation

  • In a bowl, add a cup of poha or flat rice. Wash it nicely, add two tablespoons of water and mesh the poha.
  • Add chopped onions, tomato, green coriander leaves, ginger, curry leaves, green chillies and green part of spring onion. Mix everything.
  • Add salt to taste, red chilli powder, green chillies, turmeric powder, black pepper powder, rice flour, gram flour and cumin powder.
  • Add two cups of water or as much as required to make a paste. Keep stirring while adding water to ensure there are no lumps.
  • Take a non-stick pan, add a pinch of oil and pour a ladle full of mixture.
  • Spread the batter in a circular motion, and cover the top with the lid.
  • Once the bottom has turned golden brown, flip the uttapam and let it cook on the other side.
  • When the other side has also turned golden brown, serve the instant poha uttapam with tomato ketchup or your favourite chutney.

Instant Poha Paratha

Ingredients

  • 1 Cup Flat Rice (Poha)
  • 1 Teaspoon Cumin Powder
  • 1 Teaspoon Ginger Garlic Paste
  • 1 Teaspoon Red Chilli Powder
  • 1/2 Cup Wheat Flour or Maida (Multipurpose Flour)
  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Chopped Green Chillies
  • 1 Cup Water
  • Pinch of Turmeric Powder
  • 2 Medium Boiled Potatoes
  • 2 Tablespoon Chopped Coriander Leaves
  • 2 Tablespoon Fresh Curd
  • Salt to Taste
  • 1 Cup Grated Carrot

Method Of Preparation

  • To a mixer grinder add a cup of poha and crush it into fine granules.
  • To a hot pan, add oil, cumin powder, green chillies, ginger-garlic paste and a pinch of turmeric powder.
  • Add a cup of water, salt to taste and a fine mix of poha.
  • When the poha mixture thickens, turn off the gas and take it out in a deep bowl.
  • Add grated carrots, boiled potatoes, coriander leaves, salt to taste, wheat flour or maida and knead everything into a dough.
  • Add curd to make the dough fluffy and soft.
  • Take a handful of dough and roll it into a round paratha using a rolling pin.
  • On the hot pan, put the paratha and cook it from both sides using olive oil, ghee or butter.
  • You can serve this healthy version of paratha with your favourite chutney, gravy, raita or tomato ketchup.

Delicious Poha Ladoo

Ingredients

  • 250gm Poha
  • 1 Cup Grated Coconut
  • 1 Tablespoon Ghee
  • 4 Tablespoons Cashews (Kaju)
  • 1 Tablespoon Cardamom Powder
  • 1 Cup Jaggery (Gud)
  • 2 Tablespoon Raisins (Kishmish)
  • 1/2 Cup Ghee

Method Of Preparation

  • Take a pan and roast poha in it. Make sure not to burn it. Keep it on low flame for at least 10 minutes.
  • Let the poha cool for a few minutes and grind it into a fine powder.
  • To a pan, add a tablespoon of ghee and roast grated coconut until it turns light brown.
  • Add the coconut and jaggery into a grinder to make a fine powder out of it.
  • Add jaggery, coconut, cardamom powder and powdered poha into a deep bowl.
  • On a hot pan, add a cup of ghee and roast cashews and raisins in it.
  • Add it to the powdered mixture and mix everything well.
  • Take some amount of mixture in your hand and give it the shape of a ladoo.
  • You can garnish them with almonds or any other dry fruit and store them for the days to come.
