I recently came across a one-pot spaghetti recipe while scrolling through Instagram reels shared by ‘Rafael Camargo Food.’ I made it for one of my ‘rot-in-bed’ days and honestly loved it! It is easy to make and serves well on the promise! First, you have to combine 350 grams of spaghetti, two thinly sliced medium cherry tomatoes, six garlic cloves, two sliced medium carrots, four cups of vegetable broth, four thinly sliced spring onions, and two tablespoons of olive oil in a large pot. Then, add salt and pepper to season as per your taste and finally, add water and cook it on medium-high heat, covered, till the mixture comes to a boil.

Then, reduce the heat to medium-low and let it cook uncovered for about 10-12 minutes so that the spaghetti is cooked al dente. Make sure that you stir at regular intervals. Once the liquid is absorbed, serve it hot and garnish with grated Parmesan cheese and fresh basil leaves.

This one’s my mom’s favourite! All you have to do is sauté some chopped veggies, you can pick as per your preference, and add salt, pepper, green chillies, and spices to taste. Then, add the boiled pasta (the elbow macaroni, the bow ties pasta, or the rotini pasta work best with this recipe) and cook for a couple of minutes till all the ingredients get mixed together. Try this unique, healthy, and delicious spinach-walnut pesto pasta recipe (Tri-Colour Pasta Recipe) inspired by Guntas Sethi’s Instagram reel. First, thoroughly rinse and strain the spinach leaves and boil them. Once done, take them out of the hot water and dip them in ice water for five seconds. Dry roast some walnuts and blend them with the spinach leaves, grated ginger, some garlic cloves, grated cheese, olive oil, and a little lemon juice. Roast some chopped garlic in oil or butter in a pan and add chilli flakes, sliced cherry tomatoes, spinach and walnut paste, and spices and seasonings. Add the boiled spaghetti or pasta of your choice and enjoy while hot!
