Bombay potatoes or Bombay Aloo are scrumptious potatoes fried and crisped with some exotic spices to give it a heavenly taste. Ot is a side dish but may also be served as the main course. Take a look at the recipe of the day for more:

  • Using the food processor mix well the tomatoes, the ginger and garlic. Then keep it aside for a while.
  • In a deep pan add the halved potatoes and then pour some cold water over it to cover them up entirely. Turn on the gas and let the potatoes simmer in for some time, approximately 10 minutes. Then put off the flame and strain the potatoes and let them steam dry.
  • In another pan, take the oil, add the onions and salts and cook them for 15 minutes stirring occasionally.
  • Make sure the onions are golden in colour before you add other ingredients including the chillies, mustard seeds, ground coriander, turmeric, ground cumin, garam masala etc. Cook again for 2 minutes and then add the tomato mixture stir for 2 minutes and add the potatoes gently simmer them and serve with green coriander garnishing.

Ingredients

  • 1 Piece Ginger (Grated)
  • 2 Large Garlic Cloves
  • 6 Large Vine Tomatoes (Halved
  • Deseeded And Chopped)
  • 800g New Potatoes (Halved)
  • 3 Tablespoon Sunflower Oil
  • 1 Large Onion (Thinly Sliced)
  • 2 Green Chillies (Halved
  • Deseeded And Thinly Sliced)
  • 1 Teaspoon Black Mustard Seeds
  • 2 Teaspoon Ground Coriander
  • ½ Teaspoon Turmeric
  • 1 Teaspoon Ground Cumin
  • 2 Teaspoon Garam Masala
  • Small Bunch Coriander (Chopped)

Step

  1. Step 1:

    Blend tomatoes, ginger and garlic in the food processor and keep aside.

  2. Step 2:

    In a deep pan, cover the potatoes in water and cook for 10 minutes, then let them dry.

  3. Step 3:

    Fry the onions in the oil until they turn golden then add the rest of the ingredients.

  4. Step 4:

    Stir in the tomato mixture and add the potatoes.

  5. Step 5:

    Cook for another few minutes, garnish with green coriander and serve hot!
