Ingredients Required - 

  • 4 Potatoes
  • 1 Tsp Cumin Seeds Or Jeera
  • 1 Tsp Red Chilli Powder
  • Handful Of Curry Leaves
  • 1/4 Tsp Turmeric Powder
  • 1/2 Tsp Black Pepper Powder
  • 1 Tsp Ginger Garlic Paste
  • 1 Tbsp Cumin Powder
  • 1 Tbsp Coriander Powder
  • Chopped Coriander Leaves 
  • Oil For Cooking
  • Salt To Taste

Directions - 

  • Wash potatoes and put them in a pressure cooker. 
  • Add water to the cooker and cook on medium flame. 
  • Cook for 2-3 whistles and then take off flame. 
  • Remove potatoes from the cooker and start to peel the skin. 
  • Discard the skin and place the potatoes into the refrigerator to cool.
  • Once cool, start to cut the potatoes into cubes and keep them aside. 
  • In a non-stick pan, add some oil. 
  • Add cumin seeds or jeera and let them splutter. 
  • Next, add curry leaves to the pan and saute. 
  • Add ginger-garlic paste and stir. 
  • Add boiled potato cubes to the pan and mix with the tempering. 
  • Sprinkle turmeric powder, red chilli powder, salt, black pepper powder, coriander powder, and cumin powder and mix well. 
  • Check for taste and adjust the spice level if required. 
  • Sprinkle chopped coriander leaves and combine well. 
  • Cook on a low flame for 5 minutes. 
  • Once all the potatoes are coated with the spices nicely, take the sabji off the flame. 
  • Serve hot aloo ki sabji with parathas or pooris. 
  • You can also pack this for lunch or a road trip.
