1. Coconut Chutney

Coconut chutney is a special chutney from south India which is relished as a side dish with breakfast and snacks. You can serve it with idli, dosa, vada, pongal, uttapam, sandwiches,pakoras, rice etc. 

The simple recipe of this chutney is:

Ingredients:

  • 1 cup coconut
  • 3 green chilli
  • small tamarind
  • ½ tsp salt
  • ¼-½ cup water

 

for tempering:

  • 2 tsp oil
  • 1 tsp  rai
  • ½ tsp urad dal
  • 2 dried kashmiri red chilli
  • few curry leave

Method:

  • To begin, combine 1 cup coconut, 3 green chilies, a small tamarind, and 1/2 teaspoon salt in a blender.
  • Now, add 1/4-1/2 cup water as needed.
  • Blend until a smooth paste forms, adding additional water as necessary.
  • Heat 2 tsp oil to start the tempering process.
  • Next, add in 1 tsp mustard seeds, 1/2 tsp urad dal, 2 dried red chilli and a few curry leaves. Allow it to splutter.
  • Finally, pour the tempering over the coconut chutney and serve with idli, dosa or rice.

2. Tamatar Chutney

Chopped tomatoes cooked is an all time favourite chutney of many people. It is cooked in various spices and has a sweet aftertaste. It can be served with roti, Idli, dosa and vadas, etc and will give a nice and refreshing taste.

The simple recipe of this chutney is:

Ingredients:

  • 1 tbsp Oil
  • 1 tsp mustard seeds
  • 10 Curry leaves
  • 1 crushed Garlic cloves
  • 1 tsp ginger
  • 5 tomatoes
  • 5 tsp red chilli powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 tsp vinegar

Method:

  • Put mustard seeds, curry leaves, crushed garlic cloves, and chopped ginger in a pan with oil. Sauté them together in a pan.
  • Add tomatoes and mix along to form a thick paste.
  • Add red chilli powder, black pepper, salt, sugar and vinegar.
  • Saute for some time and it is ready to be served.

3. Coriander Chutney

Coriander chutney is a delicious chutney that goes with almost everything. It is best served with kebabs and other Indian starters. 

The simple recipe of this chutney is:

Ingredients:

  • 1 Bunch of fresh coriander chopped
  • 10 Garlic cloves
  • 3-4 chopped green chillies
  • salt
  • 2 Lemons (juiced)
  • 1/2 cup whisked and sieved curd 

Method:

  • Add coriander leaves to a blender/mixer and blend until the leaves are crushed.
  • Then, add garlic, chopped green chillies, salt and lemon juice. Blend until completely smooth. If the mixture is too thick, add a little water.
  • Combine it with the curd in a bowl. It's ready to be served.

4. Schezwan Chutney

Schezwan chutney is a Spicy, tangy versatile condiment that goes perfectly with almost all delicious snacks. It is made with red chillies, garlic, ginger and more.

The simple recipe of this chutney is:

Ingredients:

  • 1/4 cup sesame oil
  • 3-4 whole red peppers
  • 3/4 finely chopped onions
  • 1 tbsp garlic
  • 1 tbsp ginger
  • 1/2 tsp chilli powder
  • 2 tbsp corn flour (mixed in a cup of water)
  • 1 tbsp vinegar
  • 1 tsp soya sauce
  • 1 tsp chilli sauce
  • 1 tsp salt

Method:

  • Blend the onions, garlic, and ginger in a blender.
  • In a wok, heat the oil and add the whole red peppers, sauteing them over high heat until they brown slightly.
  • Add in the onions, garlic, and ginger and keep over high heat until glossy.
  • Add the corn flour mixture and bring them to a boil.
  • Reduce the heat to low and mix in the chilli powder, vinegar, soy sauce, chilli sauce, and salt.
  • Cook for 1/2 minute or until well combined, and use.

5. Beetroot Chutney

Beetroot Pachadi (also known as Beetroot Chutney) is a delicious nutritious chutney variation made with grated beetroot, coconut, lentils, herbs, and spices.

The simple recipe of this chutney is:

Ingredients:

  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tbsp white urad dal
  • A pinch of hing
  • 2 seeded and shredded green chillies
  • 1 boiled and grated Medium beetroot
  • 1-2 tbsp tamarind paste
  • 1 tbsp chopped coriander 
  • salt

Method:

  • Heat the oil and add the mustard seeds, dal, hing, and chilies to make the chutney.
  • Fry until the dal turns a golden colour. Mix in the beetroot in the pan.
  • Stir and fry for 4 minutes. Then add the tamarind paste.
  • Add coriander and season well with salt. Grind it to make a paste. Serve
