Moong Dal Khichdi

When talking about Khichdi, the main ingredient is dal. You can either use moong dhuli (yellow one) or moong chilka (green one), to prepare this dish. Both these lentils are easy to digest and carry a number of health benefits. Just take equal quantities of rice and dal, along with double the amount of water. You can cook it in a pressure cooker for 3 whistles. Also add spices such as cumin, turmeric, salt, bay leaves, cardamom and cinnamon sticks. Topping it with a dollop of ghee while serving, enhances its taste further.
You might have heard of hyderabadi biryani and kebabs, but khichdi too holds a special place in the menu list of this city. This khichdi variant is a popular Maharasthrian recipe made using sabudana or tapioca. All you need to do is prepare a tadka using cumin seeds, red chillies, turmeric, curry leaves and peanuts. Just add 1-2 cups of soaked sabudana in it and cook on medium heat for a couple of minutes. Add salt as per taste and don’t forget to garnish it with lemon juice. Your basic yet appetising sabudana khichdi is ready to be served.

For this, you need to combine green moong lentils, rice, onion, garlic, ginger, turmeric, vegetable stock and salt in a pan and let it cook. Now, the main part of the dish. Take a pan and roast shrimps using coconut oil and coconut powder. You can also add onions and cumin powder to it. Now, pour the khichdi in a bowl and serve it with roasted shrimps on the side. Don’t forget to garnish it with chopped coriander.
