Try this Durga Puja Special vegetarian dish called Ghugni which is very healthy as it contains low saturated fat and cholesterol, high fiber content and rich complex carbohydrates. This super easy to make dish is loved by Bengalis as it also contains vegetables like like greens, pulses and curries.
Serves : 4
Ingredients:
Dried Yellow Peas soaked and drained and boiled 2 cups
- Oil
- Oil 2 tablespoons
- Onion 1 medium
- Cumin seeds 1/2 teaspoon
- Bay leaf 1
- Ginger finely chopped 1 teaspoon
- Turmeric powder 1/4 teaspoon
- Tomato chopped 1 medium
- Roasted cumin powder 2 teaspoons
- Fresh coconut sliced 1/4 cup
- Salt to taste
- Green chillies slit 2
- Garam masala powder 1/2 teaspoon
Method:
- Heat oil in a non-stick pan. Chop onion. Add cumin seeds, bay leaf and onion to the pan and sauté till lightly browned.
- Add ginger, turmeric powder, tomato and a little water and mix. Sauté till tomato becomes pulpy.
- Add peas and mix well. Add ¼ cup water and salt. Add cumin powder and coconut slices and mix well.
- Add green chillies, garam masala powder and mix. Cover and cook on medium heat for 5 minutes. Serve hot.
