Thandai is the summer staple drink of our country and it becomes even more relevant during the time of Mahashivratri and Holi. It is also considered to be one of the most favourite drinks of Lord Shiva. 

The cooling thandai is prepared with milk, almonds, pepper, fennel seeds, sugar, cardamom, saffron and a few other ingredients and is native to India only. Not only is the Thandai super tasty but it is very healthful. The mixture of spices present in the drink helps you keep your digestion and immunity in check and also make your internals function smoothly. 

And now that Holi is here, Thandai preparation is a must inside your kitchens but before you do that, take a look at some amazing variation recipes you can try with Thandai.

Rabri Thandai

It is a thicker version of the regular thandai and people love the amalgamation of rabri in this amazing drink. Here’s how you can make it:

Ingredients

  • 1½ Litres Full Cream Milk,
  • 8 Tablespoon Thandai Masala Powder,
  • ¼ Cup Sugar,
  • ½ Teaspoon Rose Water,
  • Almond And Pistachio Slivers  

Method

  • Boil the milk in a container with a heavy bottom. 
  • Then take the thandai masala powder and stir the mixture nicely. 
  • Let the milk and masala mixture heat and simmer for some time.
  • Once it gets reduced to somewhere between 3/4th of its original quantity and becomes coarse and grainy, then add the rose water.
  • Stir in between then add the sugar and let it cook while stirring occasionally.
  • You are almost done! Just take the rabdi in a serving glass and garnish it with the slivers of almond and Pistachios and refrigerate for 3-4 hours before serving.

Mango Thandai

With a glorious hint of mangoes in it, this is one of the most popular variations of thandai that you can try. Here’s how to prepare it 

Ingredients

  • 1 Mango Large Alphonso,
  • 7 Almonds,
  • 3 Cashews,
  • 5 Black Pepper,
  • 1/8 Teaspoon Cumin Seeds,
  • 1/8 Teaspoon Fennel Seeds,
  • 2 Cardamoms Green,
  • 3 Tablespoon Sugar,
  • 1 Cup Milk Boiled & Chilled,
  • 1/4 Cup Water

Method

  • Start by soaking in the almonds, cashews, black pepper,  cumin seeds, fennel seeds and cardamom greens in water for about an hour.
  • Then remove the peels of the almonds and take all the soaked ingredients into the grinder and use some water to form a thick paste with the dry fruits and spices.
  • Strain the mixture and get rid of the remains.
  • Puree the mango along with the sugar.
  • Next, add the mango puree to the spices paste and blend well. 
  • Then add some boiled milk to this mixture and take it all for a final blend.
  • Transfer the mango thandai into a serving glass, garnish with almonds and other dry fruits of your choice and refrigerate for 4 hours.

Strawberry Rose Thandai

This is another very amazing thandai variations to try this holi. It is easy to make and has a divine flavour and fragrance.

Ingredients

  • 4-5 Strawberries,
  • Rose Essence,
  • Rose Petals,
  • 7 Almonds,
  • 3 Cashews,
  • 5 Black Pepper,
  • 1/8 Teaspoon Cumin Seeds,
  • 1/8 Teaspoon Fennel Seeds,
  • 2 Cardamoms Green,
  • 3 Tablespoon Sugar,
  • 1 Cup Milk Boiled & Chilled,
  • 1/4 Cup Rose Water

Method

  • Start by soaking all the ingredients in rose water including the cashews, almonds, black pepper, cumin seeds, fennel seeds,  and cardamoms.
  • Then peel the almonds and make a thick paste of the soaked ingredients in a grinder. 
  • Also, puree the strawberries and add them to the mixture of the spices. 
  • Next add the rose essence, some rose water and the boiled milk. 
  • Blend all the ingredients in the blender and you can add red food colour for a better appeal. Add the colour and blend again, transfer into serving glass, garnish with rose petals and refrigerate for 4-5 hours and there you go !
