Pour milk into a pot, heat it on medium flame, and stir gently.
Turn off the heat, add vinegar or lemon juice, and stir until it starts curdling.
Cover the pot and let it rest for 20 minutes.
Gather the curd at the side of the pot and place it in a bowl.
Gently cup and squeeze the curd with clean hands till the whey is drained.
Add salt, as per your preference.
Place it in the microwave in a microwave-safe bowl for 30 seconds. Stir the cheese and reheat it for 20 seconds.
Stretch and fold the cheese with a spoon, since it is hot.
Shape it into a ball and place it in ice water for 10 minutes.
Pat dry with a paper towel to soak moisture.
