So, how about trying a traditional kulfi with a twist of mangoes. Sounds heavenly, isn’t it. Well, this awesome recipe will make you fall in love with mangoes even more! Ingredients

  • 2.5 cups mango puree or 2 ripe mangoes
  • 2.5 cups milk
  • A ½ cup of sugar
  • 1 teaspoon eliachi powder
  • A pinch of saffron
  • 12 to 15 salted pista
  • 2 ½ tablespoon almond paste or khoya
  • 2 ½ tablespoon rice flour

Directions

  • Pour almond milk in a saucepan and heat it on medium flame. Add saffron in it.
  • Let the milk come to a simmer and then lower the heat to medium-low.
  • Now, add sugar and stir it continuously.
  • In a separate bowl, mix rice flour with 3 tbsp milk.
  • Add this rice flour paste to the almond milk.

  • Mix it well and make sure no lumps are formed.
  • Let the milk simmer on low heat for 15-20 minutes. It will thicken as it cooks.
  • Remove the pan from heat and then let the milk cool completely. Once it cools down, add the mango puree.
  • Now add the mango puree with the milk. Mix it well.
  • Pour the mixture into serving bowls or kulfi molds.
  • Cover each mold with aluminum foil and place it in the freezer. Once kulfi gets set, take them out of the freezer and stick an ice cream stick in each mold.
  • Place the molds in the freezer for 8 to 9 hours.
  • Serve it chilled, topped with saffron, chopped pistachios, eliachi powder or falooda!
