On days when you want to eat something nutritious, khichdi is a staple for us Indians. Here is a healthy recipe using quinoa and not rice if you want to skip carbs in your diet.
Don't want to eat rice due to the carbs but craving for khichdi or comforting food? Then this recipe is just perfect!
Heat a pressure cooker and then add the ghee or oil.
Once it is heated, add the bay leaf and cumin seeds.
Let the seeds sizzle for few seconds and then add the hing (optional) and stir.
Add the ginger, garlic and onion and cook for 3 minutes until they soften.
Add the tomato, carrot and peas, then stir.
Add the dals and quinoa along with turmeric powder and salt.
Add water.
Stir everything together and close the cooker.
Three whistles are enough to cook the khichdi.
Once done let it settle down and then garnish with coriander.
